‘We had high hopes’: Restaurant to close in ‘saturated’ Eagle after lasting one year

A familiar Eagle gathering place will shutter later this month.

Hamburger restaurant Holy Cow Idaho plans to close at 1396 E. State St.

Expanding from its original Nampa location, Holy Cow took over the building in October of last year. Many Idahoans remember it as the longtime home of Buster’s Sports Bar & Grill, which went dark in January 2022.

Acknowledging that “it’s a tough business,” owner Dylan Hutter said that Holy Cow’s numbers are not adding up at the new location. “Obviously we had high hopes for Eagle,” he wrote in a text message. “But ultimately we are not hitting our sales goals.

“Also, the market is quite saturated in the Eagle area with new restaurants opening almost weekly and otherwise direct access up Eagle Road to dozens more.

“I didn’t want to wait any longer to furlough the amazing staff, either. The plan is to close at the end of the month hopefully giving them a bit of a runway into their next place of work.”

The 2,900-square-foot Eagle building, which also has a large outdoor patio, is for lease or for sale, real estate broker Ron Ramza said.

Holy Cow Idaho in Nampa remains open at 1226 1st St. South.

Hutter added that “we would like to thank the Eagle community for the opportunity!”
