Hatched bakery owner will achieve a lifetime dream with a new cafe in Wauwatosa
Milwaukee-area's Hatched, selling pies and other baked goods, will open a storefront after five years of business out of a ghost kitchen in Brookfield.
"It's been a long process for us," said Allison Cebulla, who owns Hatched with her husband, Craig. "We opened a commercial kitchen in January 2018, and our goal was to have a retail cafe of some sort. Of course the pandemic hit and that put a wrench in everything."

Eventually Craig came across a vacant space at 11500 W. North Ave., which turned out to be the space they were looking for.
"It feels quite surreal. I've cried about it quite a bit with happy tears. Since a very young age I wanted to open some sort of bakery cafe," Allison said. "We've survived so much, and it's just the fact that this little dream I had as a 6-year-old is finally coming true."
The 3,000-square-foot storefront will have pies, baked goods, soups, sandwiches and a full coffee program. The dining area will be able to seat about 20 to 30 people.
The Cebullas are planning to be fully operating out of their new space by Thanksgiving this year and are hoping to be open to the public shortly after.
They plan to be open 7 a.m. to 5 p.m. six days a week, catering to nearby Wauwatosa schools and residents.
Hatched currently sells at Venture Brewing Company, Canary Coffee Bar, 1848 Coffee and farmers markets, as well as through online pickup orders.
