Hoda Kotb's Mexico Wedding Was Supposed to Happen Just a Few Weeks from Now

Hoda Kotb and Joel Schiffman are just like so many couples around the country: The COVID-19 outbreak forced them to cancel their destination wedding plans. According to The Daily Mail, the Today Show host opened up to her co-host, Jenna Bush Hager, about the reality of canceling their trip. "I think some people are feeling disappointed because they thought they were going to be going somewhere. I thought I was going somewhere in a couple weeks," Bush Hager noted on the show. Kotb replied, "We thought that. We thought we were going to be there."

Kotb and her fiancé were planning to return to a beachside location in Mexico—where they became engaged last November—to tie the knot. The bride-to-be also revealed that their original (and since postponed) wedding date is just a few short weeks away. "Remember that was supposed to happen in a couple weeks?" Kotb asked Bush Hager. She added that the resort is a "beautiful spot" and "it's warm and lovely."

While Kotb has high hopes that she will be able to return back to that special spot someday to celebrate their nuptials, it is likely that she and Schiffman will get married closer to home in New York instead, People previously reported. "I think, just because, why would we [travel], given what's happening? And I don't know how quickly people are going to be able to travel again," she said. "So I think it may be a little bit more intimate than I had anticipated just because of that."

Even with the disappointment of having to cancel her destination wedding, Kotb is excited for the future with her husband-to-be. Kotb shared how their time in quarantine together, with their children, has confirmed that he is her perfect partner in life. "I do know that and that was confirmed. I think, sometimes when you're in tight quarters, you wonder, like a lot's being revealed. He's a world-class dad and one of the kindest people I think I've ever known, and you can see how someone is when they're under pressure," Kotb said of her fiancé. "We've had good times and every relationship goes through its valleys and we seem to have both had our valleys before we met. So I'm sure there are valleys ahead. But in this moment, he's been really amazing."
