  • No Certified Food Safety Manager on staff. Person-in-Charge (PIC) has a certificate posted with an expiration date of 2012. At least one staff member with food supervisory role must complete a CFSM course within 30 days and provide proof of certification.

  • Time/Temp Control for Safety (TCS) foods prepared in house, frozen and later thawed for use not date marked. TCS food prepared in house must be dated with prep and freeze date(if applicable) and thaw date(if applicable). Maximum time limit is 7 days minus the freezing time. Discussed proper date marking guidelines with PIC, who stated she would correctly date items.

  • Shelving throughout kitchen; fans in kitchen have excess food and dust buildup and must be cleaned.

  • Grease buildup on bulk grease bins outside must be cleaned.

  • Floors, walls, ceilings in poor condition in several areas. Small room off back kitchen being used for equipment storage is not approved. Do not store equipment or food in this room. Make needed repairs to kitchen areas.

  • Do not wet stack containers.

  • Invert/cover single service articles.

  • Repair hot water at hand sink next to three compartment sink.

  • Must have proper test strips for sanitizer.

  • Storage closet at tea station packed with unused items. Clean items and relocate chemicals to this closet.

  • Repair drive-up window so that it's fully self-closing.

  • Walk-in cooler unit at ~46F ambient. Several Time/Temp Control for Safety(TCS) items at temperatures of 45°F. Person-in-charge(PIC) adjusted unit temperature. After time period, unit air temp had dropped to 41°F. Ensure cold, TCS foods are held at 41° or below(prep unit across from oven also had TCS items at temps of 44-56°F. Many items had been transferred from walk-in cooler. Ensure unit is maintaining items at 41°F or below. Lids were closed on unit to lower temperature).

  • Cooked meatballs, sausage, lasagna in walk-in from previous day at 45-48°F. Items were discarded. Cooked items in prep top unit (transferred from walk-in) also discarded. TCS foods must be cooled from 135-70 in 2 hours and 70-41 in additional 4 hours).

  • Walk-in cooler and reach-in prep units do not have working thermometers. Ensure all coolers have working thermometers.
