How did your local favorites perform on their recent food service inspections?

Here are some recent food service inspections conducted by the Cherokee County Environmental Health Department:

  • Person in charge is not a certified food safety manager and does not have sufficient knowledge of Georgia Food Code requirements based on responses to basic food safety questions(i.e. cold/hot holding requirements, reheating procedures, cook temperatures). The PIC must be informed of Code requirements and maintain a level of knowledge to ensure safe food handling practices are followed. The PIC must also have a supervisory role.

  • Observed a pan of previously cooked cheese dip on top of oven at 90 °F after sitting for ~35-40 min according to PIC. After 1 hr, 40 min (1 hr after first temp check) cheese dip had reached 97 °F). Cheese dip was removed from top of oven and heated on stove top on request of inspector/EHS. At 2-hour time mark, cheese dip had reached temp of 172 °F. Previously cooked food taken from cold state and heated for hot holding must be heated rapidly to 165° within 2 hours. Proper reheating methods must be used for this process. Do not place cheese dip, or other cooked food items) on top of oven to reheat. Used approved methods.

  • Several Time/Temp Control for Safety (TCS) foods in prep cooler across from grill at 50-54 °F. Items were discarded (pico, tomatoes, ham, hot dogs) or relocated (shredded cheese, lettuce) to walk-in. Temporary ice bath was set up for items. There have been ongoing issues with this cooler. Recommend replacing. (Sliced) Tomatoes in drawer unit at 72 °F. Tomatoes were discarded. This unit does not work. Do not use this unit. There also have been ongoing issues with this unit. Recommend replacement.

  • Remarks: Do not offer any item on menu less than well done. Operator has stated in the past that no times are cooked less than well. There is no consumer advisory/disclosure on menu.
