Every season, a unique array of vegetables becomes available, offering the perfect ingredients to craft the most delicious salads. As an alternative to the Soviet-era dish of Olivier salad, renowned Ukrainian food blogger Eduard Nasyrov recently shared a budget-friendly recipe for Ivano-Frankivsk salad on his Instagram on Nov. 24.

The delightful fusion of simple, fresh ingredients gives an extraordinary flavor to the dish, making it an excellent addition to any Ukrainian festive table.

How to make Ivano-Frankivsk salad with carrots, eggs, and peas.

Ingredients:

Carrots — 700 g

Eggs — 4-5 pcs.

Canned peas — 1 can

Onion — 1 pc.

Salt, pepper

Homemade mayonnaise

Homemade mayonnaise:

Eggs — 1 pc.

Oil — 250 ml

Mustard — 1 tsp

Vinegar — 1-2 tbsp

Salt, pepper to taste

Directions:

Boil the carrots and eggs.

Take a deep bowl which will fit a grater and coarsely grate the carrots and eggs.

Finely chop the onion and add it with the canned peas.

Add the mayonnaise and mix the salad thoroughly.

To make homemade mayonnaise, it is best to mix all the ingredients from the recipe with an immersion blender in a glass container.
