New Issaquah Restaurant Serves Up Classic Italian Cuisine

ISSAQUAH, WA—Forget about the Olive Garden or Carrabba's. There is a new restaurant in town that's now serving up classic Italian cuisine. Enzo’s Bistro & Bar, located at 120 NW Gilman Blvd. in Issaquah, opened its doors for business in late-August during a time when many businesses are struggling to stay open amid the coronavirus pandemic.

"Our first weekend is almost in the books, I can’t even begin to describe what this last week has been like! A rollercoaster of emotions, endless hours working and the start to an amazing opportunity for this place to be one of the best spots to come to dine on the Eastside!" Zach Chisholm, the restaurant's general manager, posted on Aug. 23 on the restaurant's official Facebook page.

The concept, which is inspired by Culinary Director Nick Novello’s heritage, combines classic Italian and Calabrian fare with the freshest ingredients of the Pacific Northwest in elevated Italian classics like wood-fired pizza and fresh pastas.

"Chef Nick and his kitchen team are dedicated to providing the best dishes using the highest quality of ingredients," the restaurant posted on social media. "Together they spend hours making and preparing pizza dough, fresh pasta, arancini, sauces and more. This hard work and artisan touch is our passion and what makes Enzo's different."

According to the restaurant, guests will find a wide variety of freshly sourced seafood selections along with a dedicated butcher block program featuring dry-aged steak and house-roasted rotisserie chicken, made with seasonal preparations.

The new restaurant also offers a large patio for outdoor dining and also utilizes a state of the art ultra violet HVAC system ensuring a safe and delicious experience for maximum safety.

Enzo’s is family owned and operated by iconic West Coast Restaurateur Hal Griffith, founder of Great Western Pacific Inc., which runs restaurants along the west coast including Enzo’s sister restaurants in California.
