Japanese spot requires reinspection. Here are Thurston food safety scores for Oct. 11

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Sept. 28: 65 red points; 12 blue points.

Comments:

  • Rice greater than 2 inches deep was cooling while covered.

  • Miso soup was hot held below 135 degrees.

  • Some TCS foods were stored at room temperature.

  • Some TCS foods were cold held at temperatures above 41 degrees.

  • An internal food thermometer was not used to verify food temperatures.

  • The inspector noted there was inadequate equipment for temperature control. They instructed the establishment to provide space and racks in the cold hold walk in or provide a dedicated cooling unit.

  • Wiping cloths were stored on counters rather than in a container.

  • The storage area was inaccessible. The area near the door was in disrepair. The shelving was inadequate.

Lemon Grass Restaurant and Lounge

Sept. 28: 45 red points; 5 blue points.

Comments:

  • The bar sink was being used as a dump sink because two other sinks were not working.

  • TCS foods were improperly cold held in a prep unit and on a countertop. TCS foods in cold holding must be at or below 41 degrees.

  • The high temperature warewashing facilities needed to reach 180 degrees.

Old Highway 99 Co. Bar and Grill

Sept. 28: 30 red points; 2 blue points.

Comments:

  • Some TCS foods were cooled improperly.

  • The menu lacked a consumer advisory reminder statement for applicable items.

  • The kitchen floor was in disrepair.

Los Compadres Mexican Restaurant

312 Sussex Ave. W., Tenino

Oct. 2: 25 red points; 5 blue points.

Comments:

  • Improper cold holding of TCS foods such as cheese. TCS foods must be at or below 41 degrees.

  • A thermometer was not used to monitor food temperatures.

  • The menu lacked a consumer advisory reminder for cooked-to-order items.

  • A hot well was improperly used with ice to hold TCS foods.

BBQ Junkies Bar and Grill

5805 Lacey Blvd. SE, Lacey

Sept. 27: 20 red points; 5 blue points.

Comments:

  • One worker was unable to present their food worker card during the inspection.

  • Cooked pasta in the walk-in cold hold was at 55-60 degrees rather than at or below 41 degrees as required.

  • The menu lacked a disclosure statement on its consumer advisory statement.

  • The inspector noted a deficiency related to the proper use and storage of wiping cloths.

Pizza Hut/Wingstreet

1412 E. Yelm Ave., Building C, Yelm

Sept. 28: 15 red points; 7 blue points.

Comments:

  • TCS food items in a prep cold hold unit were greater than 41 degrees.

  • A thermometer was not used to monitor food temperatures in a cold hold unit that was known to be malfunctioning.

  • A warewashing machine was not working properly.

  • The establishment was directed to clean a walk-in and provide at least 6 inches of clearance from the ground to shelving.

Mr. Doug’s Restaurant

210 NE 103rd Ave., Yelm

Sept. 28: 10 red points; 5 blue points.

Comments:

  • The kitchen/cooking area lacked a dedicated hand sink.

  • A merchandiser was used to store open TCS foods. The inspector directed the establishment to relocate food to a proper unit or get a commercial unit.

Oct. 2: 5 red points; 7 blue points.

Comments:

  • An employee’s food worker card was expired or unavailable.

  • The menu lacked a proper consumer advisory for cooked to order items.

  • Food contact surfaces were not properly cleaned.

  • Shelves were not at least 6 inches off the ground.

Comments:

  • A proper thin-tip food thermometer was absent during the inspection. Workers only had an inaccurate dial thermometer on hand.

  • Dorm-style refrigerators were in use rather than a commercial unit.

  • Kitchen lights did not have a shield to protect from a splash zone.
