Every weekend they cook traditional dishes
within the kingdom's culinary heritage
such as ‘rashoof,' a soup made with lentils and fermented yogurt
They teach young volunteers the recipes
and hand out food to passersby

“I took it upon myself to work on an initiative to document traditional dishes that are almost extinct. Unfortunately, when we say ‘almost extinct,’ that is really the case. A few women in the north and south preserve these dishes. One of the aims of my initiative is continuity and preserving Jordan’s intangible heritage, like the local cuisine, dress and handicrafts of which we are proud.”
