ABOUT RESTAURANT INSPECTIONS

This is a snapshot of the inspections conducted by the Lane County health department.

Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

The person in charge did not seem to be aware of wastewater disposal requirements for mobile units. Point deduction: 5.

Osteria DOP

Location: 1122 Oak St., Eugene

Priority violations:

Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly date-marked, specifically: Container of hot brined vegetables are dated Feb. 18. Point deduction: 5.

The person in charge has not demonstrated knowledge of foodborne illness disease prevention, application of HACCP principles or the requirements of this code, specifically: The person in charge/management were not familiar with the requirements for vacuum-sealing cooked foods. The person in charge stated that cooked food items are stored in vacuum-sealed bags for up to five days. Unless the restaurant acquires a variance from the Oregon Health Authority, vacuum-sealed cooked food may only be stored up to 48 hours in refrigeration. Freshly-sealed bags of cooked potatoes and vacuum-sealing equipment were observed in the back prep area behind the kitchen. The person in charge stated that cooked vacuum-sealed food items are stored in refrigeration, then used on the hot-line in the front of the restaurant. The person in charge stated that cooked vacuum-sealed items are stored for a maximum of five days in refrigeration before being served or discarded. Point deduction: 3.

Delta Bar

Location: 1050 Green Acres Road, Eugene

Priority violations:

Food employees do not minimize contact with food in a ready-to-eat form, specifically: A food worker with long finger nails is preparing drinks, including handling drink garnishes and handling lemons for juicing and is not wearing gloves. Point deduction: 5.

Ready-to-eat food is not properly date-marked, specifically: In the bar there is a container of cooked asparagus, an open container of half and half milk, a container of house-made bloody mary mix (which includes tomato sauce) that are kept in the refrigerator longer than 24 hours, which are not date marked. Point deduction: 3.

Incorrect methods are used to cool potentially hazardous foods, specifically: There is a container with soup level about 10 inches deep being cooled with the lid sealed on the container. In the food-preparation refrigerator there are three containers of soup, with tight-fitting lids in place, that have been in the process of being cooled since March 1 (more than six hours before the time the temperatures were taken) that are measured at between 44 degrees and 54 degrees Fahrenheit. Point deduction: 3.
