ABOUT RESTAURANT INSPECTIONS

This is a snapshot of the inspections conducted by the Lane County health department.

Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

The chlorine sanitizer concentration, pH, or temperature is not adequate, specifically: The chlorine sanitizer towel solution has a concentration less than 50 parts per million. Point deduction: 5.

Chicken Bonz

Location: 1815 Pioneer Parkway E, Springfield

Food employees eat, drink or use tobacco in unapproved areas or use an inappropriate beverage container for drinking, specifically: There is a partially eaten chicken tender stored on a shelf and above items meant for public consumption as well as a canister of chewing tobacco and vape. Point deduction: 3.

Cooked potentially hazardous food is improperly cooled, specifically: Two large plastic containers of cooked chicken wings, temperature between 67 and 88 degrees Fahrenheit (multiple temperatures were taken throughout the two containers, including the chicken wings in the center of the container), in the walk-in cooler. The containers are equipped with lids. Condensation has accumulated on the lids. Cook states that items began cooling at approximately 11 a.m. Temperatures are taken at 2 p.m. Chicken did not cool from 135 degrees to 70 degrees within two hours. Point deduction: 5.

Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Baked beans temperature between 109 and 120 degrees in the steam table near the entrance of the kitchen. Point deduction: 5.
