Violations (Inspector Comments):
The Food Facility Operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. The owner of the facility was not present at the start of the inspection. The owner stated that none of the employees in the mobile unit were designated as the Person in Charge during the owner's absence. Therefore, the owner failed to designate a Person in Charge during all hours of operation.
Water in the mobile unit was not functioning at the time of the inspection. Employees had no way of washing hands.
Food dispensing utensil in cooked rice observed stored in the food and not with handle above the top of the food and the container.
Shredded chicken was held at 123 to 130 degrees Fahrenheit in the service area, rather than 135 degrees or above as required.
A thermometer for ensuring the proper temperature of food was not available or readily accessible in the mobile unit.
Water in the mobile unit was not functioning at the time of the inspection.

Observed the Person in Charge wipe a knife on the edge of the garbage can.
Handwashing sink is not being used.
A material intended to line shelves is being used beneath cutting boards. The material can no longer be properly cleaned.
The bottom interior surface of a refrigerator unit, a non-food contact surface, is not cleaned at a frequency to preclude accumulation of dirt and soil.
The handwashing sink in the mobile unit was inoperable at the time of the inspection.
