Food observed in the Bain Marie was moldy and is adulterated. It was discarded.
A deli container, an item intended for single use, was being used as a scoop in dry ingredients, instead of durable scoops with a handle.
Thermometers for ensuring proper temperatures of food are not available or readily accessible. Note: Person In Charge reported that he had purchased a thermometer; however, he was unable to find it during this inspection.
A plastic container of clean food utensils, a food contact surface, was observed to have a black liquid residue and was not clean to sight and touch.
Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Specific items that were not clean are trash cans, shelves, the interior of a refrigerator, the floor in the walk-in cooler, and an old picture that was on a shelf next to the handwashing sink.
Person In Charge does not have a valid Food Safety Manager Certification.
The handwashing sink in the prep area was very dirty. Sink was cleaned during inspection.
Potential insect harborage areas inside the food facility observed in the food prep area. A few roaches were observed on a glue trap. Food debris was observed on the floor perimeters in the prep area and behind a large chest freezer.
Rubbish and weeds were observed in the vicinity of the rear porch and exterior walk-in cooler. Weeds and rubbish create a harborage area for rodents and other pests.
