Little Cakes with Big Attitude is coming to Pineville. The popular Alexandria bakery that specializes in cupcakes is set to open its second location in the new shopping center at 2965 A Monroe Highway, across from Raising Cane’s and Wendy’s. The opening is slated for late July.

The menu will remain the same as the Alexandria location, said Robyn Schwartz, co-owner of Little Cakes along with Bridget Vaughn. Since they opened in 2008, the menu has expanded to include coffee drinks, muffins, homemade pop tarts, scones, cinnamon rolls and more.

Once the Pineville shop is up and running, Schwartz said they plan to add three new items at both locations. One will be a berry yogurt parfait that is made with vanilla Greek yogurt, fresh berries, house-made granola and a drizzle of honey. Next will be an almond croissant, which is a flaky croissant filled with almond cream, topped with sliced almonds and dusted with powdered sugar. And the third item will be a savory breakfast sandwich with bacon, egg and cheese served on a croissant.

Schwartz said they were looking to open another location. They heard that the general contracting and commercial leasing firm Petron LLC was opening a new shopping center in Pineville. She said Petron did a study and found that 55,000 vehicles pass through the Monroe Highway in that area each day.

The Savory Breakfast Sandwich made with bacon, egg, and cheese sandwich served on a croissant is among the new menu items Little Cakes with Big Attitude is set offer at both their Alexandria and Pineville locations once the Pineville shop is up and running.

“We were like, ‘Oh, we want to be part of that’,” Schwarz said. “We love working with Petron, and so it was kind of an easy fit to stay with them. They know what we like, that kind of thing.”

Most of those people coming through that area are commuters coming in from places like Grant Parish, Jena or Winnfield, Schwartz said. They want to be able to provide a service to them as they are coming into town for work and as they are going home.

The Pineville Little Cakes also is in an area reachable by students at Pineville High School and Tioga High School, in addition to people who work at Procter & Gamble, Camp Beauregard and other surrounding industries.

The hours will be the same as the Little Cakes in Alexandria for the time being as they figure out what works best for customers on that side of the river, Schwartz said.

“There are so many large corporations over there, and I know they do shift work. And I really have no idea what time their shifts are,” Vaughn said. She said they’ll have to do some research on that.

They have hired some staff members but still have spots they are trying to fill. Schwartz’s daughter, Kara Grace Schwartz, will be the manager in Pineville.

The décor is going to be light and airy with a lot of black, white and wood, said Schwartz.

“It’s mostly going to be tables and barstools,” she said.

“It’ll have some seating right as you walk in looking out the windows,” Vaughn said.

“You’ll be able to sit and look out the window and do some work,” said Schwartz. “It’s very conducive to people who work from home.”
