Longtime waitress to buy Hartford’s Coyote Flaco and wait tables: It’s her favorite part of the business

Coyote Flaco Hartford will reopen today under new management, but it’s still all in the family.

New owner Silvia Cabrera, a waitress and bartender at the restaurant since 2005 said Wednesday she is buying the popular eatery from her in-laws, who will continue to help out, “because we’re family.”

Cabrera will make the big decisions as owner, but said she’ll continue to be a waitress because that’s her favorite job.

“I love to waitress. I love customer service,” she said. “I’m happy I make them happy.”

The restaurant was closed for a week during the ownership transition. While there are no changes to the physical eatery or menu, Cabrera said she would eventually like to add some new dishes to the menu.

“My dream was to open my own business,” she said.

The restaurant at 635 New Britain Ave. will reopen at 4 p.m.
