A longtime Wichita farmers market favorite has added a butcher shop storefront in Delano
For 23 years, Hutchinson-based Phil’s Farm has been a mainstay at the Kansas Grown Farmers Market that happens Saturday mornings at 21st and Ridge in Wichita. The butcher shop is always set up in the market’s southwest corner and always has a line of people waiting to buy brats, steaks, seasoned chicken pieces, sausages and pork chops.
Now, the members of the Wichita fan base that Phil Nisly and his family have built up over the years won’t have to wait until Saturdays or drive all the way to Hutchinson to get Phil’s Farm products.
This week, the Nisly family opened a Phil’s Farm storefront in Wichita’s Delano district. It’s at 1711 W. Douglas, which is across the street from the Shamrock Lounge and right next door to Brand’s Fine Foods.
The shop is starting with a soft opening and is still filling its shelves with products in advance of a planned grand opening on Oct. 14, but its freezer cases are already stocked with many Phil’s Farm favorites, including its famous flavored brats that come in flavors like sun dried tomato basil, jalapeno cheddar, bacon cheeseburger, Thai curry and more. Customers also can find hamburger patties, breakfast sausage, bologna, bacon, lunch meat — even fresh chicken carcasses ready to be boiled into soup broth.
The new storefront came about because of customer demand, the Nisly family said.
“They’re wanting something that they can get throughout the week and throughout the winter when the farmers market closes down,” said Lisa Nisly, who is married to Phil’s and wife Lucy’s son, Jordan, and will be running the shop along with Lucy.
The two couples — mom and dad Phil and Lucy and son and daughter-in-law Jordan and Lisa — have been partners in Phil’s Farm for years. Phil started the business years ago by processing chickens and bringing them to the market. When Jordan and Lisa joined the business eight years ago, they introduced red meat to the Phil Farm’s offerings, and the family now has a butcher shop and retail business at 5303 S. Whiteside Road in Hutchinson.
The family raises its own chickens and turkeys on its farm outside the Hutchinson city limits and has contracted with a local farmer to raise its cows and pigs. Their meats are hormone and MSG-free, Lisa said.
All four Nislys load the Phil’s Farm meats up every Saturday and work the Wichita farmers market together. In addition to chicken, beef, pork and turkey products, at the market they also sell prepared items like lasagna, enchiladas and bierocks that Lucy cooks each week and that are also popular with customers.
The family is still deciding whether it will offer the prepared dishes at the Wichita shop, but for now, it has in stock a large selection of its frozen meat items plus a rack of seasonings and a selection of flavored dried egg noodles.
Soon, the shop will also stock a case full of fresh, ready-to-cook meats that will be sold from a refrigerated case, and it will also stock the Phil’s Farm line of meat marinades.
“We have loyal customers. We’re so thankful for it,” Lisa Nisly said. “It’s been fun to get to know them.”
The hours for the new Phil’s Farm store in Wichita are 9 a.m. to 6 p.m. Tuesdays through Fridays and 8 a.m. to 1 p.m. on Saturdays.
