Manassas Restaurant Inspections: Tuscani Italian Grill

MANASSAS, VA — The Prince William Health district visited several facilities around Manassas during their most recent round of inspections. The inspections occurred between April 20 and April 26.

Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

    • Total violations: 12

      • There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.

      • Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."

      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.

      • The handwashing facility observed at the Dishwasher is blocked, preventing access by employees for easy handwashing. The handwashing facility observed at the food prep area had a blockage in the drain preventing water from draining. Observed napkins being used at both handwashing stations in place of hand towels.

      • Observed that raw salmon was not protected from CROSS-CONTAMINATION with shrimp because it was observed sharing the same storage container.

      • The food-contact surface of the prep table cutting board surface is not cleaned at an appropriate frequency.

      • The prepared ready-to-eat (RTE) chicken wings in the refrigeration unit is not properly dated for disposition.

      • Methods are not being used to control pests. Observed ants on floor against wall in food prep area.

      • The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The temperature was observed to be less then 160* using Temp-Thermolabel.

      • The nonfood-contact surface of the pizza oven, grill area, all prep coolers, Walk-in cooler, ice machine exterior, as well as the dessert cooler are not being cleaned at an appropriate frequency.

      • Cleaning is being done during periods in which food is exposed to contamination.

      • Light bulb over ice machine and coffee maker area not shielded, coated, or otherwise shatter-resistant.
