Marathon County inspections: Employee handling food with bare hands, frozen fish not thawed properly, sauces exceed date mark

The following are the latest results of Marathon County Health Department inspections on licensed food establishments and other types of businesses, which the Wausau Daily Herald will report monthly.

Athens

  • R & J Cafe, 220 Alfred St.: March 29: One violation: No service sink in establishment.

Colby

  • Bowl-Winkles Two, 506 N. Division St.: March 20: No violations.

  • Hardee's, 1210 N. Division St.: March 20: One violation: Floor by soda syrup racks dirty.

Edgar

  • St. Johns Holy Name Society, 103 N. Fourth Ave.: March 3: One violation: Squeeze bottle partially filled with bleach not labeled (corrected during inspection).

Hatley

  • Lisa's at Lakeside, 214857 Marathon County Y: March 31: Two violations: Gravy not heated properly (corrected during inspection); brisket not marked with correct date when pulled from freezer.

Marathon

  • Marathon Sports Center, 1200 S. State 107: March 17: Five violations: Frozen fish not thawed properly (corrected during inspection); tartar sauce in reach-in cooler exceeded its date mark; person in charge not providing food safety training to employees on topics of date marking and storing raw foods over ready-to-eat foods; sour cream containers reused to store coleslaw and other foods; female restroom stalls not provided with covered container.

Mosinee

  • Gorski's, 450 Orbiting Drive: March 22: Eight violations: Employee seen not washing hands after taking gloves off and before putting gloves on (corrected during inspection); employee seen handling read-to-eat food with bare hands (corrected during inspection); chicken wings in walk-in cooler past their date mark (corrected during inspection); consumer advisory missing disclosure statement; metal inserts have date marking stickers still stuck to the side, and they need to be removed before stacking together; reduced oxygen packaging used without approved variance; no hazard analysis critical control point for vacuum packing meat; meatloaf not cooled properly (corrected during inspection).

  • On the Hill, 305 Old State 51: March 3: Two violations: All items served undercooked need to be identified with an asterisk on the menu; no certified food manager on staff.

  • Quality Inn, 400 Orbiting Drive: March 14: Four violations: Food items in countertop refrigerator not at proper temperature; apples washed in tub of water rather than in a colander (corrected during inspection); countertop refrigerator not equipped with permanently attached thermometer (corrected during inspection); wall next to juice machine dirty (corrected during inspection).

  • St. Patrick's Catholic Church, 136058 Halder Drive: March 3: No violations.

Rothschild

  • Bantr, 805 Creske Ave.: March 28: Four violations: Hot water in ware-washing machine not at proper temperature (business notified county March 29 that dishwasher had been repaired); inside of ice machine dirty; no single-use toweling or other hand-drying device available at employee handwashing sink behind the bar (corrected during inspection); paper plates and bowls improperly stored on the breakfast bar (corrected during inspection).

  • Coral Reef, 1025 E. Grand: March 28: One violation: Establishment's small operator's certificate expired.

  • Econolodge, 1510 Marathon County XX: March 20: Seven violations: Thermometer in countertop refrigerator not measuring accurately; test kit not available for checking sanitizing solutions; no current food protection manager's certificate posted in establishment; food items stored on floor in storage closet (corrected during inspection); non-food contact surface of juice machine dirty; single-service or single-use articles stored on the floor; permit not posted in a conspicuous area.

  • Zhou's Mongolian Barbecue, 1122 E. Grand Ave.: March 1: Two violations: Raw beef stored over ready-to-eat foods (corrected during inspection); label bottles of liquid for grill area with contents.

Schofield

  • Arby's, 927 Grand Ave.: March 7: Two violations: Front line wiping cloth solution dirty following lunch rush (corrected during inspection); kitchen ceiling vents and reach-in freezer vent dusty.

  • Country Inn and Suites, 1520 Metro Drive: March 29: No violations.

  • Hoehn's Huddle, 840 Grand Ave: March 13: Two violations: Bleach water too strong for food contact surfaces (corrected during inspection); women's restroom door not self-closing.

  • The Jim, 3012 Schofield Ave.: March 29: Four violations: Moonshine not from licensed source; laminate flooring behind the bar broken and coming loose, making it no longer cleanable; exterior door to bathroom area not tight fitting; hinge covers missing on toilet seats in men's and women's bathrooms.

  • Little Caesars, 1699 Schofield Ave.: March 31: No violation.

  • McDonald's, 2100 Business 51: March 23: Six violations: Person in charge not monitoring proper sanitation techniques; ice bin scoop stored in the drive-thru ice bin with handle touching the ice; wiping cloth sanitizer solutions not at correct concentration (corrected during inspection); wiping cloth solutions dirty; evidence of mice around water heater in utility room; floors around syrup rack and water heater dirty.

  • Speakeasy, 5505 Business Highway 51: March 29: Five violations: No test kit for checking sanitizer concentration; ice machine not air gapped; thermometer missing in 7UP cooler; bottom shelf of home-style refrigerator dirty; wall above sink in women's restroom needs repair.

  • Taco John's, 5512 Business Highway 51: March 1: One violation: No certified food manager for establishment.

Wausau

  • Aspirus Wausau Hospital, 333 Pine Ridge Boulevard: March 1: No violations.

  • Buffalo Wild Wings, 1819 W. Stewart Ave.: March 1: No violations.

  • Canteen Graphic Packaging, 200 Central Bridge St.: March 31: One violation: Dishwashing machine not sanitizing dishware and utensils at corrected concentration.

  • Ciao, 307 Third Ave.: March 23: Five violations: Wild rice improperly reheated (corrected during inspection); shrimp and oysters thawed at room temperature; reduced oxygen packed fish needs to be removed from packaging during thawing; when updating menu, only identify items that will be served raw or undercooked; install splash guard on handwashing sink or move large storage rack to new location.

  • Fazoli's No. 1753, 3812 Rib Mountain Road: March 17: One violation: Ice accumulation on floor and ceiling of walk-in freezer.

  • Hampton Inn-Wausau, 615 S. 24th Ave.: March 22: No violations.

  • IHOP, 2008 N. Mountain Road: March 22: No violations.

  • King Buffet of Wausau, 358 S. 18th Ave.: March 6: Four violations: Label bulk storage containers with common name of food; use food-grade containers for food storage; containers that previously held oyster and Hoisin sauces reused for storage; single-use bowls reused as scoops in sauces; tile flooring in front of dishwasher needs repair.

  • LaQuinta Inn, 1910 Stewart Ave.: March 28: Two violations: Edge fallen off cart that holds microwave and an adhesive strip is covering a portion of it; handwashing sink not hands free.

  • McDonald's, 225500 Rib Mountain Drive; March 8: One violation: Ware-washing machine not automatically dispensing detergent or sanitizer.

  • Pizza Hut No. 30640, 306 S. 17th Ave.: March 23: No violations.

  • The Sixth Street Filling Station, 1314 N. Sixth St.: March 22: Three violations: Salsa, maple butter and thousand island dressing exceeded its date mark; person in charge has not provided food safety training to employees on date marking and disposition of ready-to-eat foods; containers used for storing grilled chicken breasts, chorizo and breakfast sausage not approved.

  • Subway, 300 E. Bridge St.: March 21: One violation: Light intensity in walk-in cooler low.

  • Subway Sandwiches and Salads, 1819 W. Stewart Ave.: March 2: Three violations: Develop and post written procedures for diluting sanitizer and cleaning food prep sink; use only food grade buckets for carrying ice; food license not posted because of remodel.

Weston

  • Brews Brothers Pub, 4107 Barbican Ave.: March 28: No violations.

  • Fairfield Inn & Suites, 7100 Stone Ridge Drive: March 22: One violation: spray whipped cream and cream cheese not at proper temperatures.

  • Pizza Hut No. 032799, 2701 Schofield Ave.: March 23: No violations.

  • Subway No. 113, 6606 Marathon County J: March 29: One violation: Drain line for soda dispenser by the drive-thru plugged.
