Marathon County inspections: Two restaurants receive double-digit violations

The following are the latest results of Marathon County Health Department inspections on licensed food establishments and other types of businesses, which the Wausau Daily Herald reports monthly.

Edgar

  • Edgar Family Restaurant, 127590 Opportunity Lane: Jan. 24: 16 violations: Shell eggs found stored above uncovered and cooked items such as chili and cooked pasta in water; kitchen workers washing single-use gloves in the handwashing sink rather than throwing them out; cream of broccoli soup in large pot left on stove with no heat and not at proper temperature (corrected during inspection); bottles of tartar sauce in condiment cooler not at proper temperature; person in charge stated cooler tarter sauce was in had not been cooling properly and bottles of tarter sauce would be thrown out; food prep sink in rear segment of kitchen lacks air gap necessary to prevent contamination in event of backflow; facility management failed to provide food safety training to designated person in charge sufficient to maintain regulatory compliance in their absence relating to sanitization methods, monitoring of temperature-sensitive foods for hot-holding and cold-holding, proper date labeling and prevention of adulteration during storage; cases of frozen chicken and ground beef patties thawing on kitchen counter; stored food lacking date labeling or had incorrect expiration dates; food items in freezer, walk-in cooler and reach-in cooler stored unwrapped or uncovered; blue buckets used for food storage that are not made for long-term use; cutting board on north side of cookline covered with stained pits and scratches that cannot be removed by washing; shelving and bottom of ice cream freezer where glasses are stored contain dust and debris; drinking glasses are stored lip-down on visibly dirty shelving and on the bottom of the ice cream cooler; fluorescent lights in front of house prep area not shielded or shatter resistant; kitchen back door has gap on lower right side.

Marathon

  • Subway No. 134, 670 Maratech Ave.: Jan. 18: Five violations: Drain of handwashing sink, left of the four-compartment sink, drains very slowly; faucet of four-compartment sink leaking and in poor condition; vinyl tile in front of the receiving door damaged and pieces are missing; receiving door not tight-fitting; retail food establishment permit not posted in a conspicuous area.

Mosinee

  • Thunderbird Bar & Grill, 1217 Western Ave.: Jan. 31: Two violations: Wiping cloth used for wiping surfaces stored on sink and not in a sanitizing solution; microwaves and pizza ovens dirty (corrected during inspection).

Rothschild

  • Best Western Plus, 201 N. 17th Ave.: Jan. 23: One violation: Guest ice buckets wiped out with cloth after sanitizing.

Schofield

  • Evelia's Restaurant, 3406 Schofield Ave.: Jan. 30: Three violations: ready-to-eat foods held in coolers not date marked; some items on menu that cannot be served undercooked marked with consumer advisory; bag of onions stored on floor.

Stratford

  • Stratford Tiger Stop Cafe, 212804 Highway 97: Jan. 24: Eight violations: Steaks stored over ready-to-eat foods in the one-door cooler and raw hamburgers stored next to lettuce in the prep cooler (corrected during inspection); person in charge needs to train employees in food handling practices; salmon improperly thawed in package in walk-in cooler; consumer advisory missing disclosure statement; test kit not available for checking sanitizer concentrations; flour stored in unlabeled container in back storage area; soups cooled in plastic containers; provide self-closing doors for the restrooms.

  • Subway No. 119, 212400 State Highway 97: Jan. 24: No violations.

Unity

  • One More Cast Grill & Bar, 140 N. Front St.: Jan 17: Eight violations: Condiment cups dated Dec. 19 still present in refrigerator (corrected during inspection); food items that appeared to be turkey and gravy in cooler refrigerator not labeled; no handwashing sink in kitchen for use during food preparation; no approved food protection manager's certificate posted; food for personal use in walk-in cooler; handwashing sink not hands free in bar area; no service sink provided; floor and walk juncture along side and back walls of kitchen not coved.

Wausau

  • Best Western Plus, 201 N. 17th Ave.: Jan. 31: Three violations: Handwashing sink installed in storage room not hard plumbed; plastic push cart used is no longer cleanable; faucet in men's room used by employees loose.

  • Blue Willow Cafe, 1111 N. Fourth Ave.: Jan. 8: No violations.

  • Buffalo Wild Wings, 1819 W. Stewart Ave.: Jan. 31: Four violations: Spray bottles by cook's line not labeled; no irreversible registering thermometer for measuring surface temperatures in ware washing machine; three-door cooler in back of kitchen dirty; floor in kitchen needs repairing.

  • Cafe 529, 529 N. Third St.: Jan. 9: Twelve violations: Marinara sauce in steam table not held at proper temperature (discarded during inspection); house Italian salad dressing in two-door cooler exceeded date mark (corrected during inspection); sanitizer concentration in ware washing machine not at proper level; sanitizer concentration in wiping cloth pails not at proper level (corrected during inspection); person in charge not monitoring food temperatures for foods during hot holding; person in charge not monitoring proper sanitization techniques in establishment; several perishable food items in coolers not date marked; walk-in cooler not sufficient in capacity to hold foods at proper temperature; olive spread in two-door cooler not labeled with name of food; sandwich prep table not equipped with a permanently attached thermometer (corrected during inspection); shelving under the counter across from sandwich prep table dirty; vinyl tile flooring in front of sandwich prep table is cracked and pieces are missing.

  • Cantina Boys Tacos and BBQ, 201 N. 17th Ave.: Jan. 31: Three violations: Rice and coleslaw in cold holding units not date marked; test kit not available for checking sanitizer concentrations; food containers not labeled with common names.

  • Chellis St. Pub, 265 Chellis St.: Jan. 31: No violations.

  • Day Break Bar and Grill, 5307 Westfair Ave.: Jan. 23: Five violations: Items that can be served undercooked not properly identified on menu; drop chute inside ice machine dirty; box of ribs stored on floor in walk-in cooler and box of potatoes stored on floor in storage room; items like soups and biscuit gravy not cooled properly; irreversible registering thermometer not provided for measuring utensil surface temperatures in hot water mechanical ware washing machine.

  • Domino's Pizza, 301 S. Second Ave.: Jan. 17: Three violations: Pole used for eliminating air bubbles in crust and food thermometer dirty; holes about a quarter-inch in diameter drilled in receiving door near handle and a gap of about 2 inches on lower left side letting in daylight; floor under counter cooler and prep tables dirty.

  • El Mezcal Mexican Restaurant, 3100 Rib Mountain Drive: Jan. 24: Seven violations: eggs and raw meats stored over ready-to eat salsa and chili verde in walk-in cooler (corrected during inspection); washed produce stored under unwashed produce (corrected during inspection); chili verde in prep table cooler not at proper temperature; person in charge had not provided food safety training to employees on the proper organization of coolers; prep table cooler not sufficient in capacity to hold foods at proper temperature; no test kit to monitor sanitizer concentration; thermometer in prep table cooler broken and not easily readable.

  • Glass Nickel Pizza Company, 2227255 Rib Mountain Drive: Jan. 9: One violation: Employee working in pizza prep area without hair restraint.

  • Olive Garden Italian Restaurant No. 1864, 226620 Rib Mountain Drive: Jan. 10: Three violations: Ice bins not properly air gapped; facet end of mop sink is not provided with backflow preventer; lights in produce walk-in cooler not shatter resistant or shielded.

  • Reliance Inn, 116 S. 17th Ave.: Jan. 31: Six violations: Window screen missing from most rooms; refrigerator racks missing significant amount of coating with rusty metal exposed; microwave and freezer dirty; ice machine dispensing mechanism soiled; ice machine no longer has an air gap between the drain line and the sewer cup; no directions for escape provided for Room 248.

  • Subway No. 108, 2409 N. Mountain Road: Jan. 22: Five violations: Person in charge unable to demonstrate knowledge regarding the importance of proper equipment cleaning procedures; establishment does not have procedures that address responding to vomiting or diarrheal events; handwashing sink unavailable for proper handwashing because containers holding sliced deli meats were set on both sides of the handwashing sink; food protection manager's certificate not posted in establishment; mops being stored wet in the mop bucket.

  • Wausau Curling Center, 1920 Curling Way: Jan. 12: Two violations: Small kitchen dishwasher is sanitizing dishes above the allowed concentration; small kitchen dishwasher does not dispense detergent automatically.

Weston

  • Becca's Cafe, 4002 Schofield Ave.: Jan. 26: No violations.

  • Tine & Cellar, 3806 Schofield Ave.: Jan. 30: Three violations: Chlorine test kit not available for checking sanitizer concentration; squeeze bottles not labeled with contents on prep line; planks used to serve food are cracked and have very rough surface.
