Marion County restaurant inspections: Aug. 16-22 critical violations

The Louisiana Department of Health performs regular inspections of restaurants and stores that sell food. These are the local results of those inspections.

The following restaurant inspections with critical violations were conducted by Marion Public Health between Aug. 16 and Aug. 22:

King Saver, 725 Richmond Ave., Marion, Aug. 16. Food package(s) received in poor condition (critical repeat, corrected during inspection). Observed several dented cans on store shelves available for purchase. Dented cans were removed from the shelves to be discarded accordingly.

China Wok, 1356 Mt. Vernon Ave., Marion, Aug. 17. Person in charge (PIC) unable to demonstrate knowledge of temperatures and times for cooling and reheating (critical, corrected during inspection). PIC did not state correct time and temperature requirements for cooling procedure. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected). Observed food containers in the kitchen not covered. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected). Observed raw meat containers stored in the walk-in cooler above ready-to-eat food containers.

Papa Johns #626, 254 E. Center St., Marion, Aug. 17. Food employee(s) did not wash hands when required (critical, corrected during inspection). Did not observe food employee washing their hands in between placing orders and handling food. Improper bare-hand contact with RTE foods (critical, corrected). Observed bare-hand contact with garnish peppers. PIC was retrained on food handling requirements and designated tongs to be used for the peppers. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected). Observed some food containers not covered in the kitchen prep area when not being actively used. Improper use of time as a public health control - 4 hours (critical, corrected). Did not observe the time marked on the string cheese container for time tracking purposes once the container was taken out of temperature control. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed the sanitizer dispenser not dispensing the correct concentration of quat sanitizer. PIC will have food employees manually mix quat sanitizer with water to the proper concentration until the sanitizer dispenser has been repaired.

Donato's Pizza Inc. - Marion #35, 1181 Mt. Vernon Ave., Marion, Aug. 17. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected during inspection). Observed food containers not covered when not actively in use. Food contact surfaces not easily cleanable (critical, corrected). Observed deep score marks on the prep table cutting boards. PIC will use alternate cutting boards in good condition until the prep table cutting boards have been replaced.

LaRue Livestock Auction LLC, 1059 Richwood-LaRue Road, LaRue, Aug. 19. TCS foods not being hot held at the proper temperature (critical, corrected during inspection). Observed some recently prepared food items slightly below 135 degrees in two warming units. TCS foods not being cold held at the proper temperature (critical, corrected). Observed some sliced American cheese packets above 41 degrees that were being stored on an ice pack. PIC removed the American cheese packets and was advised to adjust the cold holding method for the cheese.

Stewart Root Beer Stand, 1036 N. Main St., Marion, Aug. 21. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness (critical, corrected during inspection).

Charley's Philly Steak, 1559 Marion Mt.-Gilead Road, Marion, Aug. 21. Employees are not informed in a verifiable manner of their responsibility to report information about their health (critical, corrected during inspection). Did not observe an employee illness policy. PIC was given copies of the MPH policy and had employees review and sign it. Food not properly protected from contamination by separation, packaging and segregation (critical repeat, corrected). Observed food items in the kitchen area not covered. CS foods not being cold held at the proper temperature (critical, corrected). Observed cooked onions at 70 degrees that were not being cold held or hot held. PIC discarded the onions.

Cooper's Bowl, 191 Barks Road W, Marion, Aug. 21. Improper bare-hand contact with RTE foods (critical, corrected during inspection). Observed an employee touching sliced tomatoes with bare hands. TCS foods not being cold held at the proper temperature (critical, corrected). Observed walk-in cooler temperatures of TCS foods greater than 41 degrees. PIC discarded affected TCS foods and contacted a service provider to repair the cooler compressor.

McDonalds Corporation #2217, 1600 Marion-Mt. Gilead Road, Marion, Aug. 21. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected during inspection). Observed bacon not covered in the kitchen.

Harding Harbor Seafood LLC, 267 W. Center St., Marion, Aug. 22. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected during inspection). Observed quat sanitizer levels outside required concentration. PIC remade the sanitizer and will use a measuring device for future sanitizer preparation.

Arby's, 175 McMahan Blvd., Marion, Aug. 22. TCS foods not being hot held at the proper temperature (critical, corrected during inspection). Observed sandwich on hot plate for hot holding below 135 degrees. PIC discarded sandwich. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed sanitizer dispenser dispensing quat sanitizer that was above the required concentration. PIC will have food employees manually dilute sanitizer with water until the dispenser has been repaired.

Sonic Drive-In, 185 McMahan Blvd., Marion, Aug. 22. Equipment food-contact surfaces or utensils are unclean (critical). Observed build-up of debris in ice maker. TCS foods not being cold held at the proper temperature (critical, corrected during inspection). Observed TCS foods in the syrup cooler above 41 degrees. PIC discarded the affected TCS foods. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed sanitizer dispenser dispensing quat sanitizer below the required concentration. PIC is having food employees hand mix the sanitizer to the approved concentration until the sanitizer dispenser gets repaired.
