Marion County restaurant inspections: critical violations

The Louisiana Department of Health performs regular inspections of restaurants and stores that sell food. These are the local results of those inspections.

The following restaurant inspections with critical violations were conducted by Marion Public Health between Jan. 23 and Jan. 25:

Eat Greek Marion, 151 Edgefield Blvd., Marion, Jan. 23. Food package(s) received in poor condition (critical, corrected during inspection). Observed a dented can of ketchup on the kitchen shelf. Person in charge (PIC) removed the can to be discarded. Food not properly protected from contamination by separation, packaging, and segregation (critical repeat, corrected). Observed a pan of cooked chicken being stored under pans of raw beef and raw chicken in the prep cooler, as well as a pan of raw beef being stored under a pan of raw chicken in the kitchen cooler. Equipment food-contact surfaces or utensils are unclean (critical, corrected).

Observed food debris on the can opener and peelers. Improper cooling of TCS food (critical, corrected). Observed a recently cooked pot of soup cooling in the prep sink with cool/lukewarm water. TCS foods not being cold held at the proper temperature (critical, corrected). Observed cups of house-made sauce being stored on a shelf at room temperature. PIC discarded the sauce cups. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed quat sanitizer below the required concentration in the three-bay sink.

China Wok, 1356 Mt. Vernon Ave., Marion, Jan. 23. Ready-to-eat, TCS food not properly discarded when required (critical, corrected during inspection). Observed beef in cooler that was outside of date marking date. PIC immediately discarded the item.

Presidential Post-Acute, 524 James Way, Marion, Jan. 23. Improper cooling of TCS food (critical, corrected during inspection). Observed cooked turkey and squash that was at 90 degrees in the kitchen cooler after two hours of being placed in the cooler. PIC discarded the food items and was reminded of cooling requirements. TCS foods not being cold held at the proper temperature (critical, corrected). Observed TCS food in the kitchen upright cooler that was around 48 degrees. PIC discarded the TCS food items and was advised not to use the cooler for TCS foods until it has been repaired. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected).

Observed quat sanitizer in the three-bay sink that was below the approved concentration due to the sanitizer dispenser not dispensing enough sanitizer. PIC remade the sanitizer by hand mixing it with water to the approved concentration and will continue having food employees do this until the dispenser has been repaired. Improper backflow prevention device installed on a water supply system (critical). Observed mop sink faucet without a backflow preventer.

Cruiser's Pizza Subs & Suds, 2827 Marion-Marysville Road, Marion, Jan. 24. Handwashing sink not accessible (critical, corrected during inspection). Observed the kitchen hand sink blocked by dishes and other item. Food package(s) received in poor condition (critical, corrected). Observed dented cans of tomato paste on the dry storage shelf. Food employee removed the cans from the shelf to be discarded. Ready-to-eat, TCS food not properly discarded when required (critical, corrected). Observed several food items still in the coolers past their seven-day hold time. Food employee discarded the food items during the inspection.

Marion Country Club, 2415 Crissinger Road, Marion, Jan. 24. Food package(s) received in poor condition (critical, corrected during inspection). Observed two dented cans of baked beans on the can racks. PIC removed the cans to be discarded. Ready-to-eat, TCS food not properly discarded when required (critical, corrected). Observed boiled eggs and cooked chicken in the coolers past their seven-day hold time. PIC discarded the food items. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected). Observed several TCS food items in coolers without date marks.

New White Swan Restaurant, 5969 Marion-Marysville Road, Prospect, Jan. 24. Improper bare-hand contact with RTE foods (critical, corrected during inspection). Observed PIC touching lettuce with bare hands after the lettuce was washed. Handwashing sink not accessible (critical, corrected). Observed items piled up in the kitchen hand sink. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected).

Observed several food items in the walk-in cooler that were not covered. TCS foods not being cold held at the proper temperature (critical, corrected). Observed cut lettuce sitting out at room temperature after being washed. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected). Observed some TCS food items in the coolers not date marked.

E.D.S. The Sauce Guys BBQ, 151 S. Main St., Marion, Jan. 25. TCS foods not being hot held at the proper temperature (critical, corrected during inspection). Observed rice below 135 degrees in the rice warmer. PIC discarded the rice.

Neighbors, 712 Richmond Ave., Marion, Jan. 25. Improper bare-hand contact with RTE foods (critical, corrected during inspection). Observed food employee touching cut lettuce and a baked foldover with bare hands. Food employee was educated on food handling requirements and glove use and resolved the issue by putting the foldover back in the oven for a few minutes and throwing away the touched lettuce.

Food not properly protected from contamination by separation, packaging and segregation (critical, corrected). Observed a carton of raw shell eggs sitting on a shelf above cupped sauces. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected). Observed cupped pizza sauce not date marked.

Kroger Company N 808, 1428 Marion-Waldo Road, Marion, Jan. 25. Utensils and food-contact surfaces of equipment not sanitized at the required frequency (critical, corrected during inspection). Food employee stated that the deli slicers are cleaned several times throughout the shift but they are only sanitized at the end of the night. Both the PIC and food employee were educated on the requirement to sanitize food-contact surfaces after cleaning, which is required at least every 4 hours. TCS foods not being hot held at the proper temperature (critical, corrected).

Observed roasted chicken and fried chicken below 135 degrees in the deli hot holding unit. PIC removed the chicken to be discarded and was advised not to use the hot holding unit until it has been repaired. TCS foods not being cold held at the proper temperature (critical, corrected). Observed cheesecake and cakes in the cake case above 41 degrees. PIC removed the cakes to be discarded and was advised not to use the cooler until the unit has been repaired. Ready-to-eat, TCS food not properly discarded when required (critical, corrected). Observed deli meats past their seven-day discard date in the deli meat case. PIC discarded the meats during the inspection.
