Marion County restaurant inspections: critical violations

The Louisiana Department of Health performs regular inspections of restaurants and stores that sell food. These are the local results of those inspections.

The following restaurant inspections with critical violations were conducted by Marion Public Health between Oct. 17 and Oct. 31:

Taco Bell #38880, 436 N. Main St., Marion, Oct. 17. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected during inspection). Observed guacamole/salsa mixture in metal container in the walk-in cooler that was incorrectly date marked.

Victor's Taco Shop, 669 N. Main St., Marion, Oct. 17. Person in charge (PIC) not ensuring employees are properly sanitizing equipment and utensils (critical, corrected during inspection). Observed food employee not sanitizing dishes after being washed and rinsed. PIC was advised on the correct warewashing procedures and then corrected the food employee. TCS foods not being cold held at the proper temperature (critical).

Observed TCS foods in the walk-in cooler above 41 degrees. PIC removed all TCS foods from the walk-in cooler during the inspection for disposal and was advised not to use the walk-in cooler until the unit has been repaired. Correct by Oct. 31. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical). Observed TCS foods in the prep cooler without date marks.

Marion Medical Campus Café, 1050 Delaware Ave., Marion, Oct. 17. TCS foods not being hot held at the proper temperature (critical, corrected during inspection). Observed tater tots and hamburgers hot holding below 135 degrees in one of the warming units. PIC will use time as a public health factor and discard the food four hours after it was removed from proper temperature control. PIC will also add hot meal items to their existing time as a public health control policy.

Wendy's # 22, 1308 Delaware Ave., Marion, Oct. 17. Chlorine sanitizing solution at incorrect temperature and/or concentration (critical, corrected during inspection). Observed the mechanical dishwasher dispensing chlorine sanitizer below the approved concentration level. PIC was able to troubleshoot the issue and get the dishwasher to dispense sanitizer within the approved concentration levels. TCS foods not being cold held at the proper temperature (critical, corrected). Observed dairy products above 41 degrees in the beverage cooler. PIC discarded the dairy products.

TCS foods not being cold held at the proper temperature (critical, corrected). Observed shredded cheese above 41 degrees in one of the cold wells near the French fry warmer. PIC will use time as a public health concern and discard the shredded cheese four hours after it was removed from temperature control. PIC was advised during the inspection to discontinue using the cold well until it has been repaired.

Subway of Marion, 571 Delaware Ave., Marion, Oct. 18. Improper backflow prevention device installed on a water supply system (critical repeat). Observed a broken backflow prevention device on the mop sink faucet. Correct by Oct. 31.

Tim Horton's, 1325 Mt. Vernon Ave., Marion, Oct. 18. Presence of live insects, rodents, and other pests (critical, corrected during inspection). Observed a gnat and a wasp on donut holes. The PIC discarded the affected donut holes and was advised to contact their pest control company for services to control flying insects.

Adkins Dairy Queen Inc., 561 N. Main St., Marion, Oct. 24. TCS foods not being cold held at the proper temperature (critical, corrected during inspection). Observed whipped cream to be above 41 degrees in the toppings table. PIC discarded the whipped cream. Ready-to-eat, TCS food not properly discarded when required (critical, corrected). Observed TCS foods in the walk-in cooler past their seven-day hold time. PIC discarded the foods. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed quat sanitizer to be below the approved concentration level in the three-bay sink and sanitizer bucket.

Center Street Motomart, 691 W. Center St., Marion, Oct. 25. Equipment food-contact surfaces or utensils are unclean (critical, corrected during inspection). Observed a build-up of debris inside the nacho cheese and chili dispensers. TCS foods not being hot held at the proper temperature (critical repeat, corrected). Observed pizza a little below 135 degrees in the pizza warmer. The pizza was recently prepared, so the PIC turned up the temperature on the warming unit and will also discard the pizza four hours after preparation.

PIC removed all TCS foods from the cooler during the inspection for disposal. PIC was advised not to use the cooler for TCS foods until the unit has been repaired.

Lee's Famous Recipe Chicken, 571 E. Center St., Marion, Oct. 25. Equipment food-contact surfaces or utensils are unclean (critical, corrected during inspection). Observed a build-up of debris on the can opener. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected). Observed the quat sanitizer dispenser dispensing sanitizer below the approved concentration, as well as the sanitizer bucket with a sanitizer level above the approved concentration. The PIC remade the sanitizer and will use sanitizer tablets until the dispenser has been repaired.

Thunderfury, 1477 Marion Waldo Road, Marion, Oct. 27. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected during inspection). Observed packaged of raw brats on top of packaged ready-to-eat food.

East of Chicago Pizza, 1322 Mt. Vernon Ave., Marion, Oct. 27. Equipment food-contact surfaces or utensils are unclean (critical repeat, corrected during inspection). Observed a build-up of debris on the can opener.

Heritage Elementary, 720 Columbus-Sandusky Road S., Marion, Oct. 30. Unapproved chemical sanitizer used on food contact surfaces (critical, corrected during inspection). Observed the quat sanitizer bucket concentration below the approved levels.

DeWolfe Place, 1140 Wilson Ave., Marion, Oct. 31. Equipment food-contact surfaces or utensils are unclean (critical). Observed a build-up of debris inside the ice machine.

Applebee's Neighborhood Grill And Bar, 1514 Mt. Vernon Ave., Marion, Oct. 31. Equipment food-contact surfaces or utensils are unclean (critical, corrected during inspection). Observed multiple cleaned dishes that still had debris on them. Presence of live insects (critical). Observed two live cockroaches as well as a dead cockroach in the dishwashing area of the kitchen. PIC has a weekly service contract with their pest control company and is having the area sprayed on Nov. 1. Food contact surfaces not easily cleanable (critical). Observed multiple damaged and partially melted plastic lids being used to store food.
