Marion County restaurant inspections: June 21-30 critical violations

The Louisiana Department of Health performs regular inspections of restaurants and stores that sell food. These are the local results of those inspections.

The following restaurant inspections with critical violations were conducted by Marion Public Health from June 21 to June 30:

Marion Medical Campus Café, 1050 Delaware Ave, Marion, June 21. Equipment food-contact surfaces or utensils are unclean (critical, corrected during inspection). Observed build-up of debris on ice shoot in ice machine. Person in charge (PIC) has work order for maintenance to break machine down to clean. Food contact surfaces not easily cleanable (critical, corrected during inspection. Observed scored cutting boards. PIC is replacing both cutting boards.

East of Chicago Pizza, 1322 Mt. Vernon Ave., Marion, June 22. Equipment food-contact surfaces or utensils are unclean (critical). Observed build-up of debris on can opener at time of inspection. TCS foods not being cold held at the proper temperature (critical, corrected during inspection). Observed cold-holding temperature of deli meat outside the proper temperature. PIC discarded all food that was out of temperature during the inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical). Observed food containers without proper date marking.

Legacy Marion, 400 W. Barks Road, Marion, June 22. Food not properly protected from contamination by separation, packaging and segregation (critical, corrected during inspection). Observed apple crisp being stored in the main kitchen on a rack with no covering. PIC placed cover of cart of food. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness (critical, corrected during inspection). Observed two sanitizer buckets that were reading below the required concentration. PIC dumped both buckets and refilled to meet the minimum disinfection residuals. TCS foods not being hot held at the proper temperature (critical, corrected during inspection). Observed some chicken breasts that were not being held at the proper temperature. PIC discarded the items on site during the inspection. Food contact surfaces not easily cleanable (critical, corrected during inspection). Observed a white cutting board to be scored to the point where it was no longer easily cleanable. PIC discarded the cutting board. Insufficient air gap between the flood rim and the water supply inlet (critical, corrected during inspection). Mop sink did not have an air gap at the time of inspection. PIC moved hose to loop around faucet.

Burger King Restaurant #1057, 1278 Mt. Vernon Ave., Marion, June 22. Equipment food-contact surfaces or utensils are unclean (critical). Observed build-up of debris in beverage machine ice shoots located in the dining room. PIC will contact Coca-Cola to clean the machine.

Marion County Juvenile Detention Center, 1440 Mt. Vernon Ave., Marion, June 22. Chlorine sanitizing solution at incorrect temperature and/or concentration (critical, corrected during inspection). Observed incorrect chlorine levels dispensed during mechanical dishwashing cycles. PIC will use manual warewashing procedures until dishwasher has been repaired. TCS foods not being cold held at the proper temperature (critical, corrected during inspection). Observed some refrigerated items outside proper cold holding temperature. PIC disposed of affected food accordingly and had maintenance repair the refrigerator at the time of inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical, corrected during inspection). Observed some refrigerated items not properly date marked. PIC was made aware of this and will add appropriate date marks to affected products.

SunSwim Pool, 1 Sugar St., Prospect, June 26. PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters (critical, corrected during inspection). Observed utensils being improperly washed and sanitized. Gave PIC resolution options such as installing a three-bay sink or using single-service utensils.

Waldo Swim & Recreational Center, 275 W. Main St., Waldo, June 29. Person in charge did not ensure employees are properly cooking TCS foods and/or using thermometers as required (critical, corrected during inspection). Did not observe a food worker checking cooking temperatures after microwaving frozen food. Inspector corrected the food worker and PIC will re-train other food workers on the process. Food employee(s) did not wash hands when required (critical repeat, corrected during inspection). Observed food worker not washing hands prior to donning gloves. PIC will re-train the other food employees.

Victor's Taco Shop, 669 N. Main St., Marion, June 30. PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating (critical, corrected during inspection). PIC was unable to explain the proper temperature and time requirements for the cooling process at the time of inspection. PIC reminded of the process. Equipment food-contact surfaces or utensils are unclean (critical). Observed build up of debris on can opener. TCS foods not being hot held at the proper temperature (critical). Observed food not being hot held at the proper temperature. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical). Observed food containers missing date marking.
