ABOUT RESTAURANT INSPECTIONS

This is a snapshot of the inspections conducted by the Marion County health department.

Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly date-marked, specifically: Two gallon jar of manzanilla olives is not date marked and has black growth on the inside of the lid and lip of the jar, and white growth at the top of the brine. In the walk-in cooler, teriyaki sauce in a plastic beer pitcher dated May 20 has mold-like growth on the outside of the pitcher. Although not a potentially hazardous food, the container is dirty. In the prep-top cooler sliced turkey (Jan. 23), sliced beef (undated) and sliced ham (Jan. 14) are past their date marks or unknown. Point deduction: 5.

Ready-to-eat food is not properly date-marked, specifically: Various prepared food in walk-ins improperly dated or missing dates including: cooked chicken removed from freezer (Dec. 28), shredded beef and cooked pork. Point deduction: 3.
