Meat market is about to open in Johnson County: ‘It’s like a jewelry store for beef’

Opening a store in a new market can be nerve-racking for small business owners.

For Dave Dreiling, though, not so much.

“I’m feeling really, really confident,” Dreiling said. “You just can’t get this anywhere else.”

Booth Creek Wagyu — Dreiling’s Wagyu-only meat market — is coming to Overland Park at 13412 Metcalf Ave. in mid-to-late August. The market will sell steaks, brisket, ribs and more sourced from Booth Creek Ranch, north of Manhattan.

His specialty jerky line offers six flavors, including teriyaki, sweet and spicy, and Cajun.

And sure, Johnson County offers plenty of other places to snag a steak, but Dreiling says they don’t compare.

“It’s not even close to the same level of quality of beef,” he said.

The market will move into the former Edible Arrangements spot in the Deer Creek shopping center, near Scissors & Scotch.

Dreiling opened his first market in Manhattan in 2021 after purchasing a small processing plant in nearby Riley. He began offering several cuts of Wagyu, a Japanese cattle breed with a higher fat content marbled across the steak.

The result, he says: a juicier, more tender steak than the alternatives.

“Cooking a Wagyu steak is actually much more forgiving than a regular steak,” he said.

Rather than going the online route, Dreiling wanted to give customers a chance to ask the staff questions about the products.

“In a retail setting, we can have those conversations,” he said. “We can help educate.”

This will be Dreiling’s first location in the Kansas City area, but not the last, he hopes.

He forecasts double or triple the sales of his original store and wants to offer ribeyes and sirloins across the metro.

At his original location, Dreiling hears from patrons regularly who are impressed with the variety his store offers.

“I had a customer one time say, ‘Wow, this is like a jewelry store for beef,’ and he’s right,” he said.
