As the world nears the end of what could be the hottest year in recorded history and heads into one predicted to be even hotter, a report underscores the health consequences of the warming climate.

The annual report of the Lancet Countdown on Health and Climate Change, describes a "grave and mounting threat" if we fail to reduce greenhouse gas emissions, especially given the evidence of worsening world health as the planet warms.

It outlines many ways this warming trend is already impacting the health of Americans. They include heat waves that stress young and old bodies and threaten to overwhelm hospitals; droughts and floods that endanger the food supply; the spread of disease to new areas, the extension and altered timing of allergy seasons; increases in air pollution and the growing scale of lethal fires.

Simple Classic Stuffing

I have to come clean here. I have never tried stuffing. I know, I know. My mom tells me I am missing out every thanksgiving. But I just can't do it. But I found a receipt that has five stars and it says...simple!

Ingredients:

  • ยพ cup (1ยฝ sticks) unsalted butter, plus more for baking dish

  • 1 lb. good-quality day-old white bread, torn into 1" pieces (about 10 cups)

  • 2ยฝ cups chopped yellow onions

  • 1ยฝ cups (ยผ" slices) celery

  • ยฝ cup chopped flat-leaf parsley

  • 2 Tbsp. chopped fresh sage

  • 1 Tbsp. chopped fresh rosemary

  • 1 Tbsp. chopped fresh thyme

  • 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt

  • 1 tsp. freshly ground black pepper

  • 2ยฝ cups low-sodium chicken broth or vegetable broth, divided

  • 2 large eggs

Directions:

  • Preheat oven to 250ยฐ. Grease a 13x9x2" baking dish with unsalted butter and set aside. Scatter 1 lb. good-quality day-old white bread, torn into 1" pieces (about 10 cups), in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool; transfer to a very large bowl.

  • Meanwhile, melt ยพ cup (1ยฝ sticks) unsalted butter in a large skillet over medium-high heat; add 2ยฝ cups chopped yellow onions and 1ยฝ cups (ยผ" slices) celery to melted butter. Stir often until just beginning to brown, about 10 minutes. Add to bowl with dried bread cubes; stir in ยฝ cup chopped flat-leaf parsley2 Tbsp. chopped fresh sage1 Tbsp. chopped fresh rosemary1 Tbsp. chopped fresh thyme2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. freshly ground black pepper. Drizzle in 1ยผ cups low-sodium chicken broth or vegetable broth and toss gently. Let cool.

  • Preheat oven to 350ยฐF. Whisk 2 large eggs and remaining 1ยผ cups low-sodium chicken broth or vegetable broth in a small bowl. Add to bread mixture; fold gently until thoroughly combined. Transfer to prepared baking dish, cover with foil, and bake until an instant-read thermometer inserted into the center of dressing registers 160ยฐ, about 40 minutes.

  • Make Ahead: Dressing can be made 1 day ahead up to this point. Uncover dressing, let cool, then cover again and chill. The next day, proceed with the final bake as described below.

  • Uncover dressing and continue to bake until set and top is golden brown and crisp, 40โ€“45 minutes longer (if chilled, add 10โ€“15 minutes for a total time of 1 hour 30 minutesโ€“1 hour 40 minutes).
