Mexican breakfast in Norton Commons: Louisville restaurant chain plans another expansion

A well-known local Mexican restaurant chain with four other locations in the city is setting up its fifth spot in eastern Louisville.

Con Huevos is moving into the Norton Commons building that previously housed Ramsi's Cafe, at 10639 Meeting St. That restaurant closed in September, though its Highlands location remains open. The new Con Huevos location is expected to open in early 2023.

Con Huevos will have five locations around the city when it opens in Norton Commons, but earlier this month there were only three. The restaurant group, owned by married couple Jesus Martinez and Izmene Peredo, opened its fourth location in Louisville last week, this one along Hurstbourne Parkway in Jeffersontown.

"This is very exciting for the growth of our restaurant,” Martinez said in a press release. “We’ve had our eyes on Norton Commons for quite some time and are looking forward to joining the incredible community."

The menu at the new restaurant will be no different than the other four Louisville locations, with offerings like tres leches pancakes, chilaquiles, street tacos and delicious Cuban coffee. Con Huevos, which is open for breakfast and lunch, will also host its own original artwork on its walls inside the restaurant as it has at its other distinct locations.

"My main goal leading the kitchen at Con Huevos is building on the recipes of our heritage and bringing to life the reflection of my love for great cooking,” said Peredo.

The other four Con Huevos locations include 2339 Frankfort Ave., 4938 US Highway 42, 210 W. Liberty St. and 2125 S. Hurstbourne Parkway.
