Mexican restaurant keeps opening KC area locations. This new one serves until 2 a.m.

A Nebraska-based Mexican restaurant chain is expanding in the Kansas City area — again.

Abelardo’s Mexican Fresh just opened a late-night location in Lee’s Summit after unveiling locations in Overland Park and Olathe this spring. This is Abelardo’s fourth in the Kansas City area — the first opened in Clay County.

The new restaurant has moved into the old Sonic at 300 S.E. Third St. While the other locations are open until midnight, this one offers dine-in or drive-thru until 2 a.m.

A live mariachi band will kick off Abelardo’s Lee’s Summit grand opening Wednesday from 4:30 to 8 p.m.

Originating in the Omaha area, the restaurant serves breakfast burritos, fish tacos, chicken enchiladas and more. It also offers Taco Tuesday deals — five beef or chicken tacos for $5.99.

Abelardo’s first opened in Kansas City three years ago at 455 U.S. 69. This year, it opened at 2055 E. Santa Fe St. in Olathe and 12224 W. 135th St. in Overland Park.

The Lee’s Summit location is open 7 a.m. to 2 a.m., seven days a week.
