Midlands business openings: Kudzu Bakery, Mingo Cookie Co., Lexington Medical Northeast

Spring is coming and with it are several new businesses in Columbia and Lexington. Here’s a round-up of businesses that recently opened or will open soon in the Midlands, ranging from bakeries to rage rooms.

Mingos Cookie Co.

  • The cookie bakery will open in Lexington on March 6 at 5580 Sunset Blvd.

  • Mingos Cookie Co. is hiring for management positions, prep, bakers and front end clerks for full-time and part-time positions

Lexington Medical Center in Northeast Richland

  • The Northeast campus of Lexington Medical Center will begin a phased opening in mid-March, according to hospital spokeswoman Jennifer Wilson.

  • The hospital’s new campus is predicted to create 500 jobs at he 225,000-square-foot medical facility at Clemson and Longtown roads.

  • The first openings at the hospital will include urgent care, imaging including MRIs, CT scans and X-rays and physical therapy.

  • Construction on the campus started in 2019 and was scheduled to be complete in 2020.

Urban Air Adventure Park

  • An indoor adventure park will open in the old hhgregg building at 1130 Bower Pkwy.

  • The park franchise is known for offering attractions like trampolines, go-karts, ropes courses, bumper cars and a cafe for customers to enjoy.

  • A sign on the building reads “coming soon,” but company officials did not respond to requests by The State.

  • Urban Air Adventure park opened a location in Greenville, S.C., this month.

Kudzu Bakery and Market

  • The bakery opened Feb. 23 at 4600 Forest Drive in Columbia.

  • Cakes, pies, breads made fresh daily, canned sauces and preserves, wine and more are available at the bakery.

  • Kudzu is open Monday through Friday from 9 a.m. to 6 p.m. and Saturdays from 9 a.m. to 3 p.m.

  • Kudzu Bakery and Market has two other locations, in Mount Pleasant and Litchfield, S.C.

  • The store was founded by Joey and Tracy Rabon in Georgetown, S.C., in 1989.

Food Lion on Devine Street

  • Food Lion opened Wednesday in the former “Gamecock Bi-Lo” at 4464 Devine St. in Columbia.

  • The new store will have about 75 employees, including store manager Vivian Reed.

  • Reed graduated from USC and has lived in Columbia for 39 years.

  • The grocery store is open daily from 7 a.m. until 11 p.m.

Smash the Trash Room

  • Columbia’s third rage room, Smash the Trash Room, is under construction on Garners Ferry Road, as first reported by the Post and Courier.

  • The rage room will offer old electronic devices for people to smash with tools like bats and sledgehammers.

  • The business is part of a recent trend in rage rooms that help people take out stress, anger or just have fun destroying things.

Results Fitness

  • Results Fitness gym will open next to McDonald’s at 4801 Garners Ferry Road this summer, according to a social media post by owner Robert Simmons.

  • Simmons is a personal trainer and will offer group classes, as well as personal training at the new gym.

  • “In a forever evolving field, weight training has been the consistent factor amongst the trends, and we have found the right blend of fun and hard work to keep you guessing at Results Fitness,” Simmons said on his website.

Boca Grande Burritos

  • Former Cantina 76 chef, David Grillo, is opening a burrito restaurant in early April in Columbia.

  • The restaurant will be at 4525 Forest Drive in the former Happy Cafe building.

  • Offerings will include housemade chorizo, chicken, pork and shredded beef in a fast-casual space, as first reported by the Post and Courier.
