More Thyme: Restaurateurs planning a new, second downtown Wilmington location

After opening a brick-and-mortar restaurant about a year ago, Phallin and Corey Scott are ready for a second.

The couple behind the popular On Thyme restaurant at 918 Castle St. have signed on to open something new in the former Chicken In The Box location at 1124 N. Fourth St. on the other side of downtown Wilmington.

They’re planning it to be a slightly different concept called Brunch Thyme. It will be a breakfast-and-lunch twist on their brand of classic comfort food. You will likely see their popular shrimp-and-grits and fish-and-grits entrees, Phallin Scott said, as well as pancakes, French toast and possibly breakfast egg rolls. (The Philly egg rolls are a best seller at On Thyme.)

“People have been asking for more breakfast options,” she said. They plan to be open 7 a.m. to 2 p.m. in the new space. Days are to be determined.

She added that they weren’t necessarily looking for a second space, but that this was an opportunity that worked out for them. Plus, with more space in the new kitchen, they anticipate they’ll have more room for catering orders.

“It just felt right,” she said.

The couple started with the On Thyme food truck before moving into the former Booty’s Soul Food restaurant in Nov. 2022. Since then, they've gained tens of thousands of followers on social media. About a month ago, they took that food truck to Raleigh to test the waters.

“It was phenomenal,” Scott said. “We will be going back.”

They’re hoping for a quick turnaround to open Brunch Thyme, hopefully early next year.
