Nick's opens grab-and-go sandwich shop in Fort Collins

Nick's Restaurant & Bar reemerged on Fort Collins' lunch scene Monday with the opening of its new grab-and-go sandwich concept, Nick's Sandwich Shop.

Operating out of a door on the south side of the restaurant, Nick's Sandwich Shop offers a range of take-out sandwiches, from hot options like a Cubano sandwich or meatball sub to cold options like Italian, caprese, beef carpaccio sandwiches and more.

It also serves to-go salads, snacks and drinks — from coke to cocktails and sparkling water to sangria.

Nick Doyle, the owner of Nick's Restaurant & Bar and now its sandwich shop offshoot, said the new concept is a way for his restaurant to offer lunch again. Nick's previously had lunch hours but ultimately cut them after the COVID-19 pandemic disrupted local restaurant industry.

"We had a nice lunch, but it was never really profitable," Doyle told the Coloradoan on Wednesday. "This is a way to capture lunch and add sales to the week with really low labor and low overhead. I wish we had done this in the beginning."

While Nick's is currently operating out of an existing southern-facing door, the restaurant will soon add a sliding window where takeout orders will be handled, Doyle said. Diners are welcome to eat their to-go sandwiches on Nick's patio.

Nick's Sandwich Shop is open for walk-up and online orders from 11 a.m. to 2:30 p.m. Mondays through Fridays. To peruse the menu or place an online order ahead of time, visit nicksfcsandwiches.com.
