'Nothing like it in the area': Here's what makes Raynham restaurant's ramen special
RAYNHAM — Malis restaurant in Raynham has completely reinvented itself following a lengthy period of closure.
Now called Malis Sushi & Ramen and under new ownership, the restaurant celebrated its return in January.
“This is a completely new menu,” said Anna Zou, manager at Malis, located at 1550 New State Highway (Route 44) in Raynham.
Malis is now based more around Japanese cuisine, with the emphasis on sushi and ramen.
What's on the menu
Half the menu, the cold side, is based around Malis’ extensive assortment of sushi, whether as appetizers, or as an entrée, whether as handmade rolls or as sashimi, whether completely raw, or combined with tempura.
The other half of the menu, the hot side, includes popular Asian staples, such as teriyaki dishes, fried rice, and lo mein, udon, pad thai and other noodle dishes.
Secret to great ramen
The big attraction for Malis is its ramen dishes.
“The reaction has been great over our ramen. It’s our top seller,” Zou said.
She said the key are the broths, which are cooked and simmered in large pots for at least 6-8 hours every day before they are served.
Ramen broth and noodles are served in large bowls with assorted meats, vegetables and spices.
Zou said the most popular ramen dish is the chicken katsu, consisting of breaded chicken, egg, corn, bean sprouts, sesame seeds, bamboo shoots and noodles, all in a pork broth.
Other ramen dishes at Malis Sushi & Ramen include tonkotsu (pork), miso, vegetable, and seafood, all of which the customer has the option on whether or not they want to make it spicy.
Standing out in the area
Zou said it’s the ramen that makes Malis stand out and separate from the other Asian-themed restaurants in Raynham.
“There’s nothing like it in the area,” she said.
Unexpected change
The original Malis, which opened in the summer of 2022, had a menu that focused on Southeast Asian street foods and dishes.
In July 2023, the restaurant announced it was temporarily closing due to “unforeseen circumstances.”
The original message in July indicated the intention was to retool the menu. Three months later, in October, Malis was bought by the new ownership, said Zou.
They also own Uchi Sushi & Ramen in Dedham, which has a nearly identical menu.
Zou said ownership wanted to add a new location, and the Raynham plaza, next door to 4Yew Juice & Smoothie Bar, was perfect for them as it was still relatively new, in good condition, and didn’t require any new construction.
The only feature noticeably different from the original Malis is the sushi counter.
On why they kept the name Malis, Zou said because the name is already established in Raynham. It also means they can win over old customers of Malis by honoring all gift cards previously bought last year, before the closure.
