One of Wichita’s bierock restaurants has closed

The owners of a coffee shop that also specializes in bierocks have decided to close their bricks-and-mortar operation.

On Monday afternoon, owners Gabriel and Kari Nicholson announced on social media that they were shutting down the Want Bierock Company and Coffee House cafe at 2615 W. 13th St., which they took over in March of 2021.

“The challenge of running a small business has run its course for us and our season here has met its end,” the post read.

The two bierock food trailers associated with the business, which are owned by the cafe’s founders Jim and Lori Want and also serve desserts, iced coffee and drinks, will continue to operate out of the parking lot of the closed cafe on West 13th Street, the post said.

The trailers also will continue to travel to other spots around town. They recently have been setting up at local farmers markets, including the one in Kechi and at the Kansas Grown Farmers Market and the Old Town Farm & Art Market.

The Wants originally opened the business in April of 2018, taking over a building formerly occupied by a coffee shop called Twisted Java. At first, they called it Want Coffee, but Lori Want’s homemade bierocks and cinnamon rolls sold so well at the shop that a year later, they added a food trailer designed to take her creations all over town. In 2020, the couple changed the name of their business to Want Bierock Co. and Coffee House.

The Wants sold the cafe portion of the business to the Nicholsons in February 2021 but kept the food trailer. They added a second one in March. They continue to use the building on 13th Street as a home base for their bakery.
