Palm Beach dining: At Trevini, black truffles are the shade of the moment

The annual winter season for Italy’s famed white Alba truffle is past, but truffle-loving Trevini isn’t missing a beat: It’s now featuring Italy’s black winter truffles, which are available through early April.

“Then it will almost be time for summer truffles from Italy and there are a lot of ways we will use them also in dishes,” Trevini co-owner Gianni Minervini said Thursday. “Truffles are wonderful.”

The black winter truffles hail from Italy’s Umbria region and, like other truffles, are underground-growing forest fungi.

While Trevini has long been known for its use of white Alba truffles, the black winter truffles also add “amazing” flavor, Minervini said.

While pungent, earthy and nutty like the Alba truffles, the black Umbria truffles are milder and “have a finishing taste that is almost sweet,” Minervini said.

A house-made truffle sauce lightened with beef broth is featured with truffle-accented tagliolini ($40) and truffle risotto ($40).

Truffle risotto also is featured in a layered appetizer ($28) with a parmesan chip, surrounded by pea purée, topped with a dollop of black truffle risotto, seared foie gras and a port reduction.

Beef centers another Trevini truffle dish available periodically: filet mignon with seared foie gras, thinly sliced black truffle and a truffle sauce made with a Barolo reduction ($64).

Trevini is open for lunch and dinner daily; the dinner menu is offered starting at 3:45 p.m. for late-afternoon diners.
