Pass the vegan picadillo: This health-minded restaurant is opening in Miami Shores

Carrot Express is expanding again. And this means more places to find vegan picadillo.

Of course, you don’t have to be a vegan or even a vegetarian to enjoy the menu at this health-minded, fast casual restaurant, which is opening its seventh location in Miami Shores despite the COVID-19 pandemic. There are already locations in Miami, Midtown, Miami Beach, North Beach, Coral Gables and Aventura.

The menu includes salads, acai bowls, wraps with mahi mahi, chicken or vegetables plus other platter options (pesto salmon, barbecue chicken and ahi tostones). There’s also avocado toast with bread from Zak the Baker.

You can order non traditional burgers, too: salmon, turkey, quinoa and the plant-based Impossible Burger. And there’s always that vegan picadillo, made from seasoned crumbled beyond meat over brown rice, black beans, avocado, pico de gallo and baked sweet plantain

The new restaurant is 750 square feet, with outdoor seating as well as takeout and delivery.

“We love the family oriented neighborhood and saw a demand for more nutritious options,” said operating partner and creative director Alberto Bassal. “Staying healthy has never been more important than now.”
