Pho spot needs reinspection. Here are Thurston County food safety scores for Sept. 13

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Pho Hoa Noodle Soup

1120 Galaxy Drive NE, Unit A, Lacey

Aug. 29: 55 red points; 5 blue points.

Comments:

  • Reinspection required due to over 45 red points.

  • The person-in-charge was unable to demonstrate adequate food safety knowledge.

  • Multiple food workers did not wash their hands prior to donning gloves to prepare food.

  • Bean sprouts were sitting in a container on top of a cold hold table at 68 degrees. TCS foods must be kept on time or temperature control for safety. The PIC reportedly said some boba pearls were under a time-as-a-control plan but there was no written indication of cook or discard time present.

  • Cooked rice noodles were cooling in the bottom of a prep unit. Bean sprouts were chilling in tabletop cold hold. TCS foods that are cooked must be cooled in chilled in equipment with the appropriate capacity to do so.

Olympic Crest Coffee Roasters

4211 Pacific Ave. SE, Lacey

Sept. 7: 30 red points; 22 blue points.

Comments:

  • A hand sink was unavailable because there were coffee pumps in the basin.

  • A sink was being improperly used given its designated purpose for warewashing.

  • Milk in an undercounter unit was above 41 degrees. TCS foods in cold holding must be at or below 41 degrees.

  • The establishment did not comply with permit requirements. The facility was modified without the changes having been submitted for review and approval.

  • Light was visible at the base of the door. Entrances must be sealed to prevent pests from entering.

  • Food contact surfaces were improperly clean. Blender tops were not properly washed every four hours.

  • Plumbing was not properly installed.

  • Physical facilities, including flooring, shelving, counters and electrical outlets, were improperly installed and maintained.

Sept. 8: 15 red points; 5 blue points.

Comments:

  • A cheesecake was at 45 degrees in the front display case rather than at or below 41 degrees as required.

  • An in-use sanitizer solution was too strong as prepared.

  • A warewashing machines needed to be repaired.

Sept. 7: 10 red points; 5 blue points.

Comments:

  • Cheeses in a reach-in cold hold unit were discarded because temperatures at or below 41 degrees couldn’t be verified.

  • A sanitizer solution was not properly made.

Sept. 6: 10 red points; 0 blue points.

Comments:

  • Rice in a walk-in cold hold was above 41 degrees. TCS foods in cold holding must be at or below 41 degrees.
