This popular Mass. shop serves up some of the ‘very best bagels’ in America outside of NY

Whether you prefer them puffy and shiny or dense and chewy, it’s hard to resist the temptation of a freshly baked bagel.

The New York bagel has forever been revered as the best of the best, but new shops from California to Massachusetts are gaining notoriety as bakers start to blend new regional influences and styles.

With that said, Bon Appetit set out to highlight some of the finest bagel shops in America, recently publishing a list entitled, “The Very Best Bagels in the US (Yes, Outside New York).”

“As you can probably gather, Courage doesn’t follow in the steps of the classic New York bagel. And across the country, similar lines are forming for creative, often-unconventional bagels,” Bon Appetit wrote. “As a trickle of buzzy new bagel shops turns into a full-on bagel boom, bakers aren’t looking to mimic New York quite the way they might have 10 years ago.”

Bon Appetit named three New England bagel shops on its top 25 list, including Bagelsaurus in Cambridge at 1796 Massachusetts Avenue.

“The bagels at Bagelsaurus receive over 24 hours of slow fermentation and use the same well-fed sourdough,” Bon Appetit wrote in its review. “The result is a malty, tangy bagel with a blistery, crackling crust.”

Bon Appetit noted that menu highlights include a hot-smoked salmon bagel featuring a layer of schmear, a fuchsia-hued handful of tart pickled cabbage, deeply smoky flecks of buttery salmon, and a garnish of pungent red onion and dill for good measure.

The other New England bagels shops to make the list were Rose Foods in Portland, Maine, and Rover Bagel in Biddeford, Maine.
