Popular Mexican food truck to open brick and mortar location in northwest Oklahoma City

Local Mexican food truck Taco Empire is growing, with the first brick and mortar location set to open to the public Nov. 19.

Pilar Esparza and her husband Jose Carlos Cornejo have been serving up delicious tacos, burritos, and more from their Taco Empire truck at 9400 N May Ave. Now the duo have a brick and mortar building, 7000 NW 122 Street, to go alongside the truck.

"There's a growing Mexican community in the state that contributes every day to the growing economy, to the cultural life and this is an example of what a healthy migrant community, like the Mexican and Hispanic community, can do," said Head Consul Edurne Pineda of the Consulate of Mexico in Oklahoma City. "Congratulations to Pilar and Carlos for this success and we anticipate that this is going to be the first of many Taco Empires to come."

Taco Empire's menu features standard menu items including tacos, tamales and tortas. But don't miss out on the restaurant's signature items like quesabroso tacos, adobada — marinated pork in a mix of dried chiles, orange juice and spices served with diced onions and cilantro — and Papas Adobadas, a seasoned potato side that makes any meal better. Tacos are served on delicious blue corn tortillas and there are even vegetarian, vegan and gluten free options.

"This is a very special day for us. It has been a lot of work, a lot of tears, a lot of tacos also," Esparza said.
