LIVINGSTON COUNTY — Each month, the Livingston County Health Department inspects restaurants, schools, and other facilities for unsafe food practices.

Good food safety practices are critical to preventing foodborne illness and promoting public health. The Daily publishes reports on "priority" violations — ones that could "directly lead to contamination of food or increase the risk of transmitting a foodborne illness,” as well as corrective measures taken. All reports are available at swordsolutions.com/inspections.

A total of 28 dining establishments inspected in September had priority violations. Follow-up inspections are also provided.

Four priority violations were found at:

Stillwater Grill, 503 W. Grand River Ave. in Brighton

An employee handled raw chicken with food handling gloves on, discarded the gloves, and went on to prepare ready-to-eat food without first washing their hands. Chopped parsley was sprinkled onto a dish with bare hands. A hand sink was blocked with a bucket. It was moved. There was no soap at a hand sink at the bar. It was provided.

Wing Snob, 8716 W. Grand River Ave. in Brighton

A spicy mayo dressing made in-house was kept out during the day and stored in the cooler at night. It was discarded. A dressing cooler was holding dressings at 55 degrees. They were discarded. Partially cooked chicken wings had a time stamp for five hours past the time they were cooked. It was unclear whether the person made a mistake or thought they were good for five hours instead of the four hours allowed.

A mop sink contained a Y-valve on the faucet. The water was on but shut off at the valve, causing the atmospheric vacuum breaker to be under constant pressure, which can cause the backflow prevention to fail. Staff did not wash hands after changing gloves used to handle raw chicken and putting on new gloves to handle cooked chicken. They washed their hands.

Three priority violations were found at:

Mimi's Diner, 5589 E. M-36 in Hamburg Township

No sanitizer was detected. Proper sanitizer levels were confirmed with a test strip during a follow-up inspection. Numerous items, including cooked meats and dairy products, were not labeled. They were properly dated during the inspection. A meat slicer had large pieces of food residue/debris behind the blade. It was cleaned.

Two priority violations were found at:

Hamburg Coney Restaurant, 9580 Chilson Commons in Hamburg Township

No sanitizer was detected in the dish machine. Proper sanitizer levels were confirmed with a test strip the following day. Bean/lentil soup was cooling in a five-gallon plastic bucket. The product was recently cooked and still above 135 degrees, so there was no time/temperature violation. However, this method will not likely cool the product in the required timeframe. The product was transferred to a larger metal pot and placed into an ice bath. An additional ice wand was also added.

IHOP, 8075 Nemco Way in Brighton

An employee loaded dirty dishes in the dish machine and did not wash his hands before handling clean dishes to put them away. Soap at the hand sink was low and not dispensing. It was refilled.

Jameson's Irish Pub, 110 E. Grand River Ave. in Brighton

A bar glass washer was not sanitizing. Proper sanitizer levels were confirmed with a test strip during a follow-up inspection. Staff was not using sanitizer test strips to test the bar glass washer. Staff was using test strips during a follow-up inspection.

Lynn's on First, 180 N. First Street in Brighton

A person washing dishes rinsed their hands after handling dirty dishes and before handling clean dishes. Soup was transferred to a tall plastic container after cooking, and ice was added as an ingredient. The soup was still at 125 degrees after the addition of the ice, so the soup is unlikely to cool in a tall plastic container. The soup was transferred to shallow metal pans and placed uncovered on the top shelf of the cooler.

Northwest Elementary, 1233 Bower Street in Howell

A dish machine was not dispensing chlorine sanitizer because the pump was not primed. It was re-primed and proper sanitizer levels were restored. Sanitizer levels in the dish machine had not been tested.

Ruahmah J. Hutchings Elementary, 3503 Bigelow Road in Howell

Sanitizer levels in the sanitizing sink were less than 150 parts per million. It was determined that employees were diluting the sanitizer with water from the faucet. The sink was properly refilled. Sanitizer levels were not tested in a three-compartment sink.

Tee Bone'z Tavern, 4900 Old U.S.-23 in Brighton

There was raw meat stored above ready-to-eat food in a couple different coolers. It was moved. Soup was cooling in a large plastic container in a walk-in cooler. Ice had been added as an ingredient. The temperature was 120 degrees in one container and 90-135 degrees in another container. The soups were stirred, and the temperature was taken 40 minutes later. It was still 100 degrees, so the person in charge was going to put the soup in shallow metal pans two inches deep to quickly cool. Cooked rice was left at room temperature. It was 78 degrees. It was placed in the cooler loosely covered.

The Cozy Inn, 10906 Grand River Ave. in Brighton

Staff did not wash their hands after touching raw meat with food handling gloves and changing gloves to handle ready-to-eat food. Staff washed their hands. A hand washing sink at the bar had cans stored in it. They were removed.

Sanitizer levels at a three-compartment sink were too strong. The person in charge emailed pictures of a new dispenser and sanitizer between 200 ppm and 400 ppm.
