Ramen collabs from some of Chicago’s favorites chefs coming to Ramen-san

Ramen-san, the irreverent noodle restaurants by Lettuce Entertain You Enterprises, just announced a new collaboration series with notable creative chefs from Chicago.

Palita Sriratana of Pink Salt, a former health care worker who introduced her Northern Thai-inspired cuisine at a food hall in 2019, will kick off the series Jan. 19.

Upcoming collaboration chefs include Henry Cai of 3 Little Pigs Chi (who’s perhaps become best known for his Chinese American fried chicken sandwiches) and Jonathan Zaragoza of Birrieria Zaragoza (a recent rightful star on Netflix’s “Taco Chronicles”).

“Each visiting chef will create a ramen dish inspired by their cooking style that will be available at all Ramen-san locations (River North, Streeterville, Fulton Market and Lincoln Park upon opening) for a limited time for dine-in, carryout and delivery,” according to a LEYE release. “The partnership will culminate with a one-night-only event, where the visiting chef will serve an exclusive multicourse dinner to guests, with tickets available for purchase through Tock.”

Ramen-san in Lincoln Park is expected to open in February at 1962 N. Halsted St.

All three locations currently open will serve Sriratana’s khao soi nua ramen, promising flavorful braised beef in a light red curry and tamarind broth with pickled mustard greens, featuring the restaurant’s “Tokyo wavy noodles,” from Jan. 19-31.

The chef will host her collab series finale dinner at Ramen-san in Fulton Market on Jan. 31, but it’s already sold out.

A family-style meal will include miang kham (leaf wrapped bites with pineapple, grilled galangal paste and roasted coconut shards), som tum (spicy green papaya salad), nam khao tod (crispy rice with fermented pork sausage), sai ua tsukune (Northern Thai style chicken sausage) and her collab ramen, the khao soi nua. She’ll finish with a dessert of Thai tea mousse in pâte à choux.
