Randy Couture is living life to the fullest after almost getting taken out by a medical emergency, and weeks after he was hospitalized he's out enjoying a night of good food and good music. The UFC legend was seen this week in downtown Las Vegas with his longtime girlfriend, Mindy Robinson.

We're told the two started the night off at Andiamo Italian Steakhouse, located within the D Casino Hotel. They dined with country singer/songwriter, David Lee Murphy.

Couture was seen enjoying a delicious filet, which are seasoned and charbroiled to perfection at Andiamo. We're told it's his favorite cut at the famed Italian steakhouse.

After dinner, the MMA star and his girlfriend were seen in casino owner Derek Stevens’ VIP box at the D Casino Hotel to watch country star, Rodney Atkins, perform live in front of thousands of fans outside at the world-famous Fremont Street Experience.

The "Farmer's Daughter" singer packed the street for the Downtown Hoedown and later took to Instagram to rave about what an "awesome party" it was.

Bouncing Back

After the show, Couture and Robinson were able to get backstage and spend some time with Atkins. They were seen speaking and even posed for a few photos.

Last month, Couture suffered a heart attack and almost didn't realize he needed help.

The fighter initially thought he suffered a rib injury during a workout, and after unsuccessful attempts to work it out with a roller, he finished his workout and went home to rest.

After he was still in pain, Couture walked himself to the hospital and was told he was experiencing a heart attack. He went into surgery and doctors placed a stent placed in the diagonal artery of his heart to remove a blockage.

Afterward, Couture released a statement letting everyone know that he wasn't going anywhere:

"Contrary to recent rumors, I have not kicked the bucket yet,” Couture wrote. “I am alive and well. Special thanks to the amazing staff at Cedars Sinai Hospital. From the ER to cardiac ICU thanks for taking care of me.

I’m one of those people that has crazy thick blood and nominally high bad cholesterol. Unfortunately, those 2 factors combined to create a nice clot including my diagonal artery. The (catheterization laboratory) at Cedars got right on it, cleared it out and placed a stent in its place.

Thanks to all of you out there expressing your concern. Your love and support mean the world to me and my family. Live your lives to the fullest. You never know when you’ll draw that last breath in!”
