Raw salmon and malfunctioning dishwasher result in health violations for Scottsdale restaurant

Maricopa County health inspectors cited one restaurant for four health violations during the week of Sept. 22. The violations ranged from raw salmon stored above cooked short rib to a dishwasher running with no detectible chlorine.

A priority violation is a major violation that directly contributes to an increased risk of foodborne illness or injury. If listed in the inspection reports, remedies implemented during the inspection are noted.

During the week of Sept. 22, inspectors visited nearly 1,100 restaurants along with other food-serving facilities in hospitals, senior homes and schools. Nearly 140 restaurants received an A rating. See a sampling of the many restaurants that inspectors graded A at the end of this article.

4 violations

Zinc Bistro, 15034 N Scottsdale Rd Suite 140, Scottsdale

  • A tray of raw salmon was stored directly above cooked short rib in the walk in cooler. Another tray of raw salmon was stored directly above cooked crab in the rear walk in cooler. The trays of raw salmon were moved to prevent cross contamination.

  • No detectable chlorine was found in dishwashing machine. No detectable chlorine was detected after priming the machine and running it for a second time. The restaurant will use the bar dish washing machine and the three-compartment sink until the kitchen dishwashing machine is repaired.

  • Cooked mashed sweet potatoes were at 46F in the drawer cooler. Multiple sticks of butter were stored at 77F. The butter and mashed sweet potatoes were discarded.

  • Bread was on open display in the dining room with no effective means of protecting it from contamination by consumers. The bread was fully covered with clean linens.
