‘Real Housewives of Beverly Hills’ star Crystal Kung Minkoff invites girlfriends over for homemade Mediterranean dinner

On this episode of In The Know Eats: Dinner Party, Crystal Kung Minkoff (@crystalkungminkoff) of The Real Housewives of Beverly Hills and co-founder of Real Coco Organic Coconut Water hosts her non-Housewivesmom friends” for a Mediterranean dinner in her Los Angeles, California backyard.

On the menu is a roasted cauliflower steak, roasted tomato couscous salad, a fresh Brussels sprouts salad, panko-crusted salmon, and of course a Real Coco (@enjoyrealcoco) coconut water cocktail.

Crystal already prepped the couscous for the salad, so all that’s left is to pour some olive oil on it and add the veggies, which include fresh and roasted tomatoes, cucumbers, rinsed chickpeas, and a mixture of fresh Italian parsley and basil. Lastly, she squeezes some fresh lemon juice on top of everything and mixes it all together. Crystal also mentions that she likes to add feta to this salad, but since everyone’s tastes and diet restrictions are different, she keeps it on the side.

Next up is to prepare the panko-crusted salmon. Crystal mixes Panko bread crumbs in a bowl with some chopped parsley, olive oil, lemon juice and lemon zest. Crystal notes to use enough olive oil to the point that the bread crumbs start to stick together. Then, Crystal spreads some Dijon mustard on a salmon filet and tops it with the Panko mixture. All that’s left is to pop it in the oven at 425 degrees Fahrenheit for 20-25 minutes and then it’s good to go.

With the salmon in the oven, it’s time for a cocktail. “My favorite part of hosting a party is making a cocktail,” says Crystal. “Wait, no, drinking one. My second favorite part is making one.” And this cocktail is extra special because it includes Crystal’s coconut water brand, Real Coco Organic Coconut Water. Crystal uses the Nam Hom Coconut Water for this cocktail, “which is only found in a very small region of Vietnam,” explains the host.

For the coconut water cocktail, Crystal mixes one part tequila blanco with one part coconut water. Then, she squeezes in some fresh lime juice, and adds some orange liqueur before mixing it up.
Finally the guests arrive and once everyone has a coconut water cocktail in hand, it’s time to relax in Crystal’s serene backyard. When dinner is ready, everyone migrates to the table and digs in. Crystal’s mom friends can’t get over how delicious everything is, but the host has one last trick up her sleeve: a sundae bar! With everyone enjoying their custom dessert, it’s safe to say that this dinner party was a total success.
