A recipe for traditional banosh

Banosh or banush is a traditional Ukrainian dish, popularized in the Hutsul region of Ukraine’s Carpathian Mountains. Banosh is a corn porridge, cooked in sour cream or cream, and usually served with cottage cheese and some roast. Chef Eduard Nasyrov has been preparing the dish for many years for both business and pleasure, and strongly recommends trying this tasty recipe yourself The chef prepares the dish with a vegetarian roast, but you can also try it with lard.

Banosh recipe

Ingredients:

  • 200 g of medium-ground corn grits

  • 200 ml of fat sour cream

  • 400 ml of milk

  • 50 g of butter

  • salt and pepper to taste

  • cottage cheese/greens for serving

For frying:

  • 1 onion

  • 1 chili

  • 2 cloves of garlic

  • smoked paprika, salt and pepper

  • 2−3 tbsp. oil

Preparation:

  1. Chop the onion and fry until soft in a hot pan. Add chopped garlic and chopped chili. Cook everything together until golden, adding salt, pepper, and paprika.

  2. In a saucepan with a thick bottom, mix milk and sour cream, heat them well.

  3. Pour in the cornmeal and cook the porridge, stirring for 20 minutes, until the corn is ready. In the middle of the process, add butter to the dish.

Serve the dish sprinkled with cheese and roast.
