Show Me Triumph: 6.7% New England Double IPA.

'"Show Me' is our popular single hopped New England IPA series that rotates out a new hop each time around. Sharing the same grain bill this beer is nice and hazy with just enough body to not steal the "Show" from the featured hop. This batch we used the Triumph hop.Triumph hops have intense and fruity aromas with prominent peach, lime, and orange, followed with suggestions of spice and pine. Triumph is more delicate than other fruit forward varieties, but still robust enough to be used in a wide range of styles."

"German-style hefeweizen offers a striking beer experience thanks to the use of distinctive wheat and rye malt, unique yeast and uncharacteristic appearance. This beer was named after our of our beer-tenders, Erica aka "Icka" as her niece would call her. We all have that Aunt or Uncle that has a special name since we couldn't pronounce their real name."

Who wouldn't be smiling at a full mug of beer?
Who wouldn't be smiling at a full mug of beer?

"Våronna (translation: “spring farm work”), our Norwegian-Style Farmhouse Ale is made with Connecticut-grown ingredients including sweet gale from our land, spruce tips from Tiny Acre Farm and Thrall Family Malt. While each such ingredient was sourced within a small, 50-mile radius, the sum of the parts was very much inspired by Nordic sensibilities. Co-fermented with a combination of our own house culture and Voss kveik, a unique Norwegian farmhouse yeast strain, this special expression was further aged in uniquely characterful gin-barrels that had previously held Zinfandel wine. What emerged from the oak was decidedly different than what went in - the botanical qualities shifting and evolving in beautiful and unexpected ways."

21 years and counting: Dean's Corner Diner in Jewett City

The Cavern: 7% Doppelbock.

"Once again, Thrall Family Malt graciously prepared a small batch of custom smoked malt - this time, their Connecticut-grown barley was smoked over native oak. Rounding things out are a blend of local and German character malts along with restrained additions of Spalt Select and Tettnang. The Cavern was lagered for over three months. Our favorite examples of Rauchbier and Doppelbock walk a fine line. Assertive smoke character that doesn't cross over into acrid or overly phenolic is a tricky balancing act while complex and bready (but clean) maltiness without trending too sweet is the key to a great Doppelbock. The challenge may be great but so is the payoff -a deeply comforting and richly flavored beer that drinks with ease."

Tox Brewing Company

Mantis: 5.4% CT Table Beer.

"Our 100% Connecticut grown table beer. Mantis is easy drinking and reminiscent of a Witbier or Grisette/Saison. It starts with base of Pilsner Malt, Triticale, and Spelt, all grown by Thrall right here in CT. We are thrilled to be using Cascade hops grown in Colchester by our friends at Hop Culture Farms and Brew Co. We brought this baby home with a French Saison yeast. Aromas of a grassy wheat field lead to a bright frothy mouthfeel and flavors of clove from the dominating saison yeast. We are experiencing a subtle sourdough earthy grain complexity and spiciness that we attribute to the spelt and triticale. Crisp, earthy, and floral hop characteristics round out the layered flavors that hit you all at once. We named this beer after the state insect that can be found in our beer garden during the season!"
