Restaurant inspections: Dry rodent feces, no allergen label, dented cans in Wichita KS

Seven restaurants, hotels and other businesses in the Wichita area were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted March 19-25.

Information about the Sedgwick County businesses and their violations, compiled March 31, appears in an alphabetical list below with a summary of the problems inspectors noted on their reports. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases.

More than 50 establishments passed their inspections with few or no violations that same week. Those also appear alphabetically below. Some may have appeared on a prior non-compliant list.

How establishments fail

Most violations are minor and are corrected during an inspection.

Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, such as pest infestations or broken plumbing.

It’s rare for an establishment to shut down over a failed inspection, but it can happen. Examples include when an establishment operates without water or power, doesn’t have refrigeration to keep food cold, has ongoing and untreated pest problems or has a sewage backup. Usually closures are temporary.

When a business fails, it’s usually inspected again within 10 days.

Out-of-compliance inspections

Best Western Governors Inn & Suites-Wichita, 4742 S. Emporia in Wichita — Seven violations during a March 21 routine inspection. Cited for not individually wrapping apples to prevent contamination, gravy wasn’t kept cold enough, sausage patties and milk weren’t labeled with package opening dates, no probe-style food thermometer on site, no test strips to measure strength of sanitizer used for washing dishes, no paper towels at hand-washing sink, bottle of pancake syrup stored on top of bucket of laundry cleaner. The hotel was in compliance during a March 30 follow-up inspection.

Da Chicken Shak & More, 1112 W. 31st St. South in Wichita — Four violations during a March 21 inspection listed as the business’s first operational inspection after licensing. Cited for not having detectable amount of sanitizer in wiping cloth bucket, raw gizzards thawing at room temperature, no working thermometer to check internal temperatures of food, sanitizer bucket was sitting on refrigerated preparation table “where it could drip or splash onto food.” Next inspection: March 31.

Domino’s Pizza, 10231 W. 21st St. in Wichita — Two violations during a March 20 inspection prompted by a complaint. Cited because several items in the pizza make table including chicken nuggets and sausage weren’t cold enough, approximately “200 dry rodent droppings” around the restaurant including underneath storage racks and behind refrigerator. The restaurant was still out of compliance during a March 30 follow-up inspection.

El Rancho Motel, 4510 S. Broadway in Wichita — Twelve violations during a March 22 inspection prompted by a complaint. Cited for not having single-use gloves in laundry room, no carbon monoxide detector in maintenance room with gas water heater, no record of smoke and CO detector testing every six months, no emergency management plans for employees, all fire extinguishers were overdue for inspection, some rooms had no or non-working smoke detectors, dirty floors in some rooms, holes in bedding, dirty microwaves, no sign posted alerting guests that hotel is pet friendly. Next inspection: April 1.

Great Wall Chinese Restaurant, 6254 E. 37th St. North #160 in Wichita — Six violations during a March 22 routine inspection. Cited for storing raw shrimp and raw chicken above cooked broth and tray of muffins in cooler, almond cookies weren’t labeled with allergen information, noodles and broccoli stored in plastic tubs that weren’t food grade, cracked and chipped cabbage container, water wasn’t hot enough at kitchen hand-washing sink, no paper towels at kitchen hand-washing sink. Next inspection: April 1.

Haysville Express Inn, 301 E. 7th St. South in Haysville — Three violations during a March 20 routine inspection. Cited for preparing breakfast for guests in home kitchen, not sanitizing dishes, washing dishes in home kitchen instead of at three-part sink where items can be washed, rinsed and sanitized. Next inspection: March 30.

Walmart, 5475 N. Meridian in Wichita — Six violations during a March 21 routine inspection. Cited for selling dented food cans and ripped or opened food packages, storing raw meats next to prepared and ready-to-eat foods, raw turkey rolls touching raw pork rolls in retail case, whole chicken wasn’t kept hot enough in deli display case, no hot water at bakery hand-washing sink, sanitizer hanging above sleeve of deli cups. Next inspection: March 31.
