New restaurant from Michelin-starred chef opens in downtown Tampa this week

A new fine-dining experience comes to downtown Tampa on Wednesday, when Ebbe opens at 1202 N Franklin St., the former location of Mole y Abuela.

The restaurant is the concept of Swedish-born chef Ebbe Vollmer, who has helmed Michelin-starred restaurants including Singapore’s Jaan and at Gordon Ramsay’s Royal Hospital Road in London.

Vollmer has lived in Florida for about a year and in January decided to open a restaurant in Tampa.

Ebbe will offer a 14-course tasting experience at a fixed price of $285. There are two tables, one of which is a chef’s counter where the staff cooks in front of diners. The restaurant seats 35 people.

Vollmer said in a phone interview that he preferred an intimate concept for a “small amount of customers” to “make sure they are happy.”

The food is described on the restaurant’s website as “free wheeling, from fantastic Florida to essential Scandinavia.”

Vollmer is sourcing fresh ingredients from local farmers and fishers, so some dishes will be prepared using food they have found that same day.

“Everything will be prepared between just a couple of hours before the customer is eating, and most of it is fished in the morning and served in the evening,” Vollmer said.

A curated wine list includes selections from France, Germany, Austria and California to complement the food.

Guests will be encouraged to settle in: The experience takes 2 ½ to three hours.

“Each experience is unique for us in the kitchen ... so customers will see what we do and we also get direct feedback from the dining room, which creates a nice rhythm,” Vollmer said.

Ebbe will be open 5 p.m. Tuesday-Saturday, with the last seating at 8 p.m. To make a reservation, visit chefebbe.com.
