Roaches. Old meats. Fly strips over food. Wichita KS restaurants failed inspections

Five restaurants, a bakery, a convenience store and a meat market in Wichita and Derby were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture last week.

Information about the eight businesses and a summary of their violations appears below. The list, compiled Nov. 8, includes inspections conducted in Sedgwick County from Oct. 29 to Nov. 4.

More than 80 establishments passed inspections last week. They also appear below. Some may have been non-compliant in previous weeks.

How establishments fail

Most violations are minor and are corrected during an inspection.

Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, like bug and rodent infestations. Typically, failed establishments are re-inspected within 10 days.

It’s rare for a facility to shut down over a failed inspection, but it can happen over issues such as sewage backups, pest problems, or operating without water, power or refrigeration. Usually, closures are temporary.

Out-of-compliance inspections

Discount Cigarettes, 2160 S. Broadway #110 in Wichita — Six violations on Nov. 1 during a routine inspection. Chicken wings weren’t hot enough in hot holding case, no test strips for sanitizer, no paper towels at hand-washing sink, bottles of window cleaner were stored above utensils and straws, no probe food thermometer, no soap at hand-washing sink. Next inspection: Nov. 11.

Hibachi Boy, 3010 E. Central in Wichita — Eight violations on Nov. 1 during a joint inspection. Sixteen-day-old rangoon cream cheese mixture, bottle of sanitizer wasn’t labeled with contents, sushi rice wasn’t kept hot enough, no backflow prevention on food preparation sink, no hot water at kitchen hand-washing sink, no hand-washing sink in upstairs preparation area, employees were washing hands at sink not designated for hand-washing. Next inspection: Nov. 11.

Jimmy’s Egg, 317 N. Rock Road in Derby — Five violations on Oct. 31 during a routine inspection. No paper towels at hand-washing sink, diced tomatoes weren’t cold enough in ice bath, old deli turkey and deli ham, old chorizo and chicken breasts, the restaurant only had one food thermometer and it didn’t work, vegetable dicers in clean storage were dirty. Next inspection: Nov. 10.

Juarez Bakery, 1068 N. Waco in Wichita — Six violations on Oct. 31 during a routine inspection. Sanitizer in three-compartment sink wasn’t set up and there were no sanitizer test strips on site, display shelves for baked goods didn’t have any doors or other protection from contamination, employee ate a doughnut but didn’t change gloves before touching customer food, no paper towels at hand-washing sink, employees were eating in food preparation area which can contaminate customer food, raw eggs were stored above gallons of milk in cooler. Next inspection: Nov. 9.

Tianluo Bistro, 11309 E. Kellogg Drive, Suite 200 in Wichita — Eight violations on Oct. 31 during an inspection that was a follow-up to an administrative order. Cooked beef in cooler wasn’t labeled with preparation date, missing paperwork related to preparation of egg rolls and other foods, fried rice sat at room temperature but wasn’t labeled with the time it was put out, several foods including sweet and sour chicken and cooked beef weren’t kept cold enough, fly strips hanging over food preparation tables in kitchen, green beans stored in plastic T-shirt bags instead of food-grade containers, flour was stored in sanitizer bucket, raw meat and eggs stored above ready-to-eat vegetables in cooler. Next inspection: Dec. 31.

Todd Brian’s Brick Street Cafe & Tavern, 315 N. Mead in Wichita — Seven violations on Nov. 4 during a routine inspection. Mashed potatoes and gumbo weren’t kept hot enough, etouffee wasn’t hot enough, pulled pork and ham weren’t labeled with dates they were removed from freezer, old tiramisu and au jus, raw chicken and fish stored above pans of produce and dressings, dirty and greasy pan in clean storage, dirty dicer, “heavy food debris and grease on and under the equipment throughout the facility,” raw chicken and fish weren’t cold enough in refrigeration. Next inspection: Nov. 14.

Tuptim Thai, 2121 N. Rock Road, Suite 300 in Wichita — Four violations on Oct. 30 during a routine inspection. Cabbage and tofu weren’t kept cold enough, employee touched ready-to-eat egg rolls and other appetizers with her bare hands, bean sprouts and peanut sauce weren’t labeled with preparation dates, containers of curry soup weren’t labeled with preparation dates, five cockroaches crawling on dishwashing machine. Next inspection: Nov. 9.

Yoder Meats, 375 S. Maize Road in Wichita — Seven violations on Nov. 3 during a routine inspection. Meats and cheeses were labeled with the wrong packaging dates, no test strips for sanitizer on site, bathroom opens into kitchen but doesn’t have a self-closing door, business wasn’t keeping or organizing logs for vacuum packing meats and cheeses, chemical bottles were stored in dedicated hand-washing sink, spray bottles weren’t labeled with contents, hand-washing sink didn’t work. Next inspection: Nov. 13.
