Lubbock will see a new restaurant taking over the former Growler USA Kitchen and Taphouse in the next few months.

Rusty Taco, one of several restaurant companies linked to Lion's Den LLC, will make its entry into the Lubbock market within the first two weeks of May 2023. If the first location becomes a success, the business may add a second location to the Hub City.

Naj Hassan, a senior consultant for Lion's Den and the vice president of business development for C. Larson Real Estate, discussed why he wanted Rusty Taco in Lubbock this year.

"Lubbock is one of my favorite cities in the world," Hassan said. "Back in 1981, I actually spent my first Christmas in Lubbock. I fell in love with this small town with big city amenities, yet the culture is very personable. It's a vibrant town ... and we're happy to be in Lubbock."

The upcoming Tex-Mex restaurant will take over the former Growler USA, 6030 Marsha Sharp Freeway, which closed in 2020.

"It will be upscale, full service, and have a bar as well as the restaurant, so families can be there," Hassan said. "The environment is very family-oriented. The interior of (our) restaurants tries to bring the flair of upscale Mexican culture and environment, with food that is most affordable."

The Lubbock location will cover 3,900 sq. ft. and will feature an outdoor patio. The bar will offer margaritas and Texas beers on tap. Hassan said the food will be made-to-order.
