Shelby restaurant inspections: March critical violations

The following restaurant inspections with critical violations were conducted by the Shelby City Health Department in March:

Shelby IGA, 140 Mansfield Ave., Shelby, March 15. Chlorine sanitizing solution at incorrect temperature and/or concentration (critical repeat). No sanitizer in ware machines in deli/ bakery. To prevent a foodborne illness, proper ppm of sanitizing solution shall be available. Hand sanitize until repaired/replaced. Equipment food-contact surfaces or utensils are unclean (critical repeat). Throughout bakery/deli/meat room unclean food surfaces. Cutting boards/ surfaces shall be smooth and easily cleanable. Plane or sand as needed.

Unsafe, adulterated or not honestly presented food not discarded or properly reconditioned (critical repeat, corrected during inspection). Observed severely dented cans not removed from shelves. To prevent a foodborne illness, severely dented cans shall not be sold. Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment or utensils are placed (critical repeat).

Garbage disposal backed up and overflowing unto dishwashing machine counter. Repair broken or stopped-up garbage disposal. Food in an RFE must be embargoed due to adulteration, misbranding or baby food or formula is expired (critical repeat, corrected during inspection). Observed outdated baby food. Manager pulled food from sales.

The inspection reported noted that the health department was requesting an office hearing, and that the facility had 30 days to make corrections. IGA will need to provide written plan to get the facility up to minimum standards to continue operating the deli/ bakery area.

Napoli's Pizza, 126 Broadway St., Shelby, March 25. Person in charge (PIC) unable to demonstrate knowledge by having no critical violations (critical). Improper bare-hand contact with RTE foods (critical). Observed handling of foods (subs) after baking with bare hands. To prevent a contamination which could cause a foodborne illness, employees shall eliminate bare hand contact with either gloves, utensils or wraps.

Food equipment surfaces not cleaned at required frequency (critical). Observed buildup of food debris on slicer. Slicer is required to be cleaned and sanitized every four hours of continuous use. Correct by April 1. Refrigerated, ready-to-eat, TCS foods not properly date marked (critical repeat). No date marking on TCS foods as required. Mark and discard after seven days to prevent the growth of pathogens which could cause a foodborne illness. Correct by April 1.
